helloHello everyone. I have a question about canning blackberry juice. My husband picked berries yesterday and I steam juiced them last night. I would like to can some for a friend who can not use sugar. I looked in the BBB, but as I understand it, you need to add sugar and then you can water bath. Looked in my canning manual, said you can do it without sugar, but must pressure can it. Will have lots of juice this year, ideas for use other than jelly? Just would like to know what most of you do.

Also, can anyone recommend a good website for pressure canning? I loved canning2 but I have been unable to sign in after extensive trying. (I'm too stupid, it's too mean, I give up already.) Newby canner status.

Hi, kathy, I don't really can juice, but it sounds like it would be good for smoothies or for making sherbert/ices/ice cream, too.  Here is a good site for canning:

Or else on the Farm Bell main page, in the right hand side bar midway down are the Canning Tutorials, one for pressure canning, one for hot water bath.

Another good, and inexpensive resource to have on hand is a "Ball Blue Book" which usually costs between 5 to 8 dollars, depending on where you buy it, but they're usually easy to find in stores like K-mart, Wal-mart, Target and other stores like that.
