Looks like we need a spot to drop links we use as resources for canning information.  Most of these links are somewhere around here, having come up in conversation many times.  But here are a few, to get started:

http://www.freshpreserving.com/  The official Ball Canning website.  Has info and canning guides, as well as some recipes.  Of course, there are things for sale there as well, and they have a canning message board.

http://www.uga.edu/nchfp/  NATIONAL CENTER for HOME FOOD PRESERVATION — Considered by many to be the absoute best place to get the latest information about home canning.  Many recipes and such.

http://www.canning-recipes.com/  A bunch of canning recipes.  Difficult to find what you are looking for because they are not alphabetized according to main ingredient, but a terrific resource.  (PLEASE NOTE that some of these recipes appear not to conform to accepted safe canning practices.  They do, however, serve to give us ideas about combining ingredients, ratios, that sort of thing, but always, ALWAYS process according to accepted guidlines.)

Newly published, the latest and greatest on food safety when canning this summer: http://www.uga.edu/nchfp/tips/…..afely.html

Excepts include:

"In the past two years, there have been at least 3 events of botulism poisoning from improperly processed home canned green beans."

"Jars of improperly canned vegetables and meats can contain the deadly botulism toxin without showing signs of spoilage."

"To use the USDA canning procedures, make sure you select a pressure canner/cooker that is capable of holding at least 4 quart size jars, on the rack, with the lid in place ready to can.  If it is smaller than that, we do not recommend it for home canning."

Where is the best place to get these jars for a good price? I would definitely prefer storing my food in glass than plastic.

The best places to get canning jars is estate auctions, yard sales, church rummage sales and free cycle. Somebody has to buy retail but I try to avoid.

Anyone know of a place to get a cheap pressurecanner? They aren't available in my country, as pressure canning just isn't done here, and I can't afford to buy one retail and get it shipped here.

I'm trying to figure a way to help you, but really I just don't know… even when there are 'free shipping' specials, it's almost always only in the continental US.  Unless you know of someone traveling to the US or Canada with room in their baggage to bring one back, or if there were some kind of equivalent of craigslist there, where you could post a "Wanted to Buy" ad and someone would happen to have one. 

Between customs and shipping it's pretty tough.  Will any housewares or kitchen stores there order one direct for you?  …I know, or at least I suspect you've looked into that, but I'm trying to think out loud here.

There aren't any even here that are all that cheap, unless it's at a yard or garage/moving or estate sale.  Even that is getting fewer and further between because people are starting to home can more and more these days.

Adanais, where do you live? I can ask on a couple of canning groups for you – there are folks there from many spots around the world who have figured out how to get a pressure canner. Cannot hurt to ask them!

A pressure canner is but one component in the canning system. You also need jars, rings and fresh dome lids.

There are many places that sell pressure cookers but canners are more difficult to find on the internet.
