So last night, before I started any fancy canning of peaches, I wanted to can just some plain ol peaches in medium syrup.  So I did.  I packed all the peaches in the jars, added the hot syrup and processed for 30 minutes – BBB instructions.  But now my jars are only 1/2 full of peaches and when I look at the pretty canning pictures their jars are always clear full of peaches. What did I not do right? Next time instead of raw pack, should I hot pack. I was really diappointed.

 

Last year I did pints of these and they shrank but not nearly like this….any ideas?  I want to figure it out before I go trying to put together pretty brandy peaches that are only 1/2 full and give them away as gifts.

I always hot pack, there is a lot of shrinkage in most fruit and veggies, and don't forget, the pictures in books and magazines are staged–that's why they look so perfect.

Jeannie hit the nail on the head…..twice~!!  I prefer hot pack, too…you have to really *mash* them in cold packed if you want a full jar, and then the end up not looking like anything you'd want to eat. :)  AND yep, the pictures are staged. Food photography is an art, and there are sorts of cheats and tricks to make everything look just right.

if I wanted to take a picture of pretty canned peaches I would buy a can of peach halves, carefully pack them in a jar add the syrup and place a lid on top. I have never been able to can peaches that looked as nice as the commercial canned peaches.

I found this out with the apricots that I canned, I will do the hot pack method next time.

LOL Ross.  I don't want pictures of the silly things, I just want to eat them, but I was expecting more than a 1/2 full jar to eat.  and in the conserving space mode…the pints would have taken up less space than the 1/2 full quarts.

 

I am going to do hot pack this weekend and see if it gives me a better result as far as full jars. If not, I'll go back to pints…I'm pretty flexible and am willing to work with what the food will do!

 

Either way I got peaches and that's a start!
