The title says it: has anyone canned pears in pineapple juice? I saw this on-line. I like the idea beacause I really want to cut down on the sugar content in my home canned pears. Plus , it is supposed to keep the pears from turning brown. Any thoughts?? Thank you!

tw- Anyone evr used an apple peeler to peel your pears? Thanks again- I appreciate your info as I have been given 4 brown bags of beautiful pears and I don't want to waste one!

If you have the refrigerator space you can pastuerize the fruit in juice or syrup and keep it in the fridge after a BWB processing. Just heat the sliced fruit to about 150 with the juice or syrup and pack into hot jars  and give them about ten minutes in a boiling water bath. keep refrigerated until you use them.

Never used pineapple juice for canning pears but I have used orange juice for both pears and peaches.  It was very good for both!

Why refrigerate? I really don't have the space. I can't store them on the shelf?

WalnutSpinney- did the orange juice keep the fruit from turning brown? How did you process? And in what proportion did you use OJ?

If they are just pastuerized they won't keep on the shelf but they also aren't cooked so soft. If you would keep them on the shelf then you must follow the proceedure for BWB and acid  food if you use juice.

Yes, the fruit kept it's color but as I prepared both the peaches and pears, I dropped them into a pan of water with ascorbic acid, lemon juice, or salt/vinegar added.  (I always do this step when working with fruits that will discolor and which one I add to the water depends on what I have on hand. )

I used orange juice with a little sugar added (1 quart of orange juice plus 1/3 cup sugar) as the liquid for both.

Canning in orange juice doesn't require any timing adjustments for hot packed pears or peaches which happen to take the same number of minutes for BWB processing: 20/pints, 25/quarts (adjust for elevations above 1,000').

Is there any reason I cant use pineapple juice in place of the orange juice? Also, I found a website that mentioned canning pears in a light syrup and pouring 1/3 cup pineapple juice into the bottom of the quart jar before adding pears and syrup. Anyone ever try this?
