Forgive me,  I am new to this online community, but the other day someone was asking about Cear Jel and where to get it.  I searched high and low to find the conversation, but can't locate it again, so I am starting a new string and hope the person that was needing the information sees this.  I purchased both kinds of Clear Jel on line from Barry Farm.  Web site is http://www.barryfarm.com.  It cost way more in shipping than the product cost, but arrived within a week.  I have tried the non-instant kind in several canning recipes and it turned out great!  I have not yet tried the instant.  There were no instructions, but I emailed the company and they gave me the ration of 1 Tablespoon of Clear Jel to one cup of cool liquid.  Then you heat your liquid and as you do so the Clear Jel will start to thicken the liquid.  I had some apple juice left over after canning some apples and used this ratio to thicken the juice, threw in some raisins and served over the pork tenderloin I had made for dinner and it was delicious!  Please let me know if you have any other questions about my post.

If you live near an Amish Community check with them since they are known to make ClearJel®.  I generally get mine through eBay with sellers who do business with them.  Price and shipping are reasonable. 

As stated, the regular ClearJel® is used for cooking/canning and is the only thickener approved by the USDA for home canning.  'Instant' ClearJel® is precooked and therefor used for cold or non-cooked foods, like pies.  Great stuff and a long shelf life.
