Hi everyone,

 

It has been such a long time since I've been on the forum.  I have a question about tomatoes and forgive me if this has been covered somewhere else.  I did a search, but didn't come up with much.  I had a little garden this year and my tomatoes were late coming in.  I harvested some, but I ahve a bunch of still green ones on the vines (both large and cherry sized).  I hate to let them sit out there and have the frost get them.  I just don't know what to do with them.  I could eat some fried green tomatoes, but I am the only one in the house that likes them.  And my guys wouldn't go for the green tomato and apple cobbler.  What else can I do?  I wasn't sure if I could substitute them in a tomatillo style salsa.  I could dehydrate them, but if I don't know what to do with fresh ones, I'm not sure I'll know what to do with dried ones.  Thanks for the help!

Hi Jen.  Welcome back to the forum.  I also have a huge amount of tomatoes that will not ripen before first frost (possibly within the next 7 days) and plan to can dilled green tomatoes using my Mom's dill pickle recipe.  Larger tomatoes are quartered but smaller ones I just leave whole.  If leaving whole prick with a fork to allow the brine to penetrate.  I don't care for them but my sons and DH love them.  Also, I made old fashioned green-tomato piccalili last week from an old family recipe.  If you don't have the recipes let me know and I will post them.   Good luck. happy-butterfly

If you don't let your guys see you making treats with green tomatoes, they will never know!  I make green tomato cake that many guys rave over, and they never know that it contains tomatoes. 

 

You probably have a while before frost in Mechanicsville.  My brother usually picks tomatoes up close to November and I am so jealous!  We had 38 degrees twice this week.

 

If they have no blemishes, you can pick them and wrap them in newspaper or paper towels and store in a cool place.  Then take a few out at the time and place them in a sunny window.  They are not as good as vine ripened, but still better than grocery store plastic tomatoes.  I have had ripe tomatoes at Christmas several years.

Thanks everyone!  Wildflower, I can see why you would be jealous.  Although I have never been able to pick that late.  Probably due to the dadgum squirrels.  :)  I will definitely try wrapping some in newspaper.  I assume the fridge is "too cool".  Hmmm…I'll have to figure out a spot.  I totally want a root cellar for food storage.  We don't have a basement or anything and finding a cool, dry (read low humidity), long-term storage place above ground in Mechanicsville is tough. 

Mamawolf, would you mind passing on your piccalili recipe?  That sounds really good.  

Miss Judy, ha!  Nice try.  :)  I am such a novice canner.  I have a steam canner that I still need to try out.  You know Cindy's post about canning using storebought juice?  Yep, I've done that.  I have a long way to go in canning.  But!  I am so willing to learn.  Perhaps I really need to come to the retreat next year.
