OfflineI've just recently started making my own yogurt, too, so I'm still figuring this stuff out, but so far I'm mixing my homemade freezer jam into mine to sweeten it. I'm also using it as a ricotta substitute (works great in Suzanne's Pepperoni, Sausage, and Mozz Rolls!); I drain it in my new Donvier Cuisipro Yogurt Cheese Maker. I was using cheesecloth to drain it, but I hated using it once and throwing it out–I'm cheap that way.
Oh, and this is my first post here. Hi, everybody!

When I make yogurt in the Excal, I did a post on that here, I like it plain with dried fruit mixed in just before I eat it. I don't like real sweet yogurt so I don't mix in jelly or anything like that. My DH, however, loves his with a little strawberry jelly mixed in. I've kept yogurt for at least 2 weeks in the fridge. I normally make a gallon at a time and have never had any problems with it going bad. Good luck and let us know how it works for you.

OfflineTalented yogurt people, has anyone done or is anyone considering doing a post on Farm Bell about yogurt in a dehydrator? (not that I have one of those yet, but many on here do) I'm still trying to work out issues with the crockpot yogurt. It turns out all thin and ropey. Maybe it's just time for a new package of culture or a new crockpot.![]()

OfflineI also just did my first yogurt in the Excal. I used pint sized Ball jars (because that is what I have). To drain I placed a small square of cheescloth just large enough to cover over one jar then secured it with a heavy duty rubber band. I tipped the jar upside down in the strainer. I reused the square of cheescloth for each of the pints, and then tossed. I sweetened with raw coconut crystals (just discovered these at the food coop), added some nutmeg and cinnamon and mixed with fresh October apples. Yum!
I am still working on getting the yogurt to be more yogurt like. This set was kinda cheesy. My daughter thinks I may have over done it in the Excal. (Although the Excal temp was set to 110, i found the temp actually got higher than that. Need to figure that one out)
The raw coconut crystals do not taste like coconut but do add a nice flavor, somewhat nutty and akin to molasses. I love it in my coffee, in yogurt, granolas….not so great for hot tea though. The crystals have a low glycemic index, are organic, raw and add some nutrients. But the best news is, I have dropped the Sweet n Low habit in my morning coffee.

OfflineThat sounds great Joan! I'll have to watch for the coconut crystals! Congrats on getting away from the Sweet n Low (or other artificial sweeteners) I agree with the logic that they give us a false sense of security and just feed our urge to pile on the sweets, which aren't always free!
Interesting flavors like what the coconut crystals sound like, is what I go for too… though my dad is diabetic so we do use SOME of that stuff, we mostly have rearranged what we eat to the point where the complex carbs and whole grains etc fill our plates so he's been off the insulin for quite a while.

OfflineI use a (very clean) dishtowel to drain my yogurt. NOT terry–the floursack kind. Most of the yogurt just peels off the towel after draining, so I can just toss it in the wash when I finish with it.
I make a gallon at a time, and line my colander with the towel. I usually drain it all night, and sometimes mix some of the whey back in if the yogurt is too stiff.
