Left over sweet gherkin brine - make relish?

Hello everyone,

 

I am canning Sweet Gherkins tonight and have ended up with left over brine/juice.  I also have left over pickles (un-brined).  What do you think about chopping up the pickles add some chopped onion and grn pepper -adding enough brine to cover and canning it as relish.  The ingredients are similar for a sweet pickles relish that I have but obviously the process is off because I am using the left over brine.  I though about letting it marinade over night.  Any thought's on this?  Has anyone done this or similar?  Think it will work?

They are cucumbers until you apply the brine and you should be able to safely use the brine to make more pickles of a different variety.

Thanks Ross -just the confirmation I needed.  And you're right "cucumbers".  I've just been in serious pickle mode.  Thought I was done, but it looks like I'll be doing relish tomorrow.  I even ended up with too many spears cut from making dill pickles.  Oh well, better too many than not enough.

I sometimes use left over sweet pickle brine to pickle beets.  Just heat brine and pour over cooked beets and let set in refrigerator.  Add more spices first, if desired.
