My New Excalibur!

I just pulled my new Excalibur out of the box and set it on its throne (er, table).  Now I see.  Now I know.  I haven't even used it yet and I know it is BETTER.

 

I have been flipping through the (very nice, big!) book that came with it and OHMYGOD along with two thousand other uses it also makes CHEESE!!!!!

 

I'm in love.

 

I'm so dehydrating all day tomorrow!!!!!!!!!!!!!!!!!!!

omgosh ,omgosh

  so exciting  that you are just beginning this…  and you can share all of your marvelous dehydrating adventures  with us !  Was there any better time to be born !!?  the stars have aligned !

  sorry,  suzanne… carried away,  by the real, live  ,ongoing excitement,   YOU have infused us with,    all those eons ago in the slanty little house…(  phew !  aNOTHER run on sentence …) 

  and now look…all these wonderful people who have come together and joyfully share their hard work and discoveries with you,  and ultimately,  us. 

 

  I was so hoping mine would come today…but I went on a craigs list adventure and relieved a lovely little old lady of 150 canning jars for 20 $  .  Oh I am so happy. (after I poked out all of the spiders !!!)

  and y'know…some of this comes from me just doing it.  

Beef jerky is what I'm really interested in…want to give lots of it for Christmas to all sorts of people…but if cheese is part of the grand scheme…omgosh.  And really,  the aha moment was when we popped open a jar of dehydrated peppers Kelly brought…and they permanently saturated my brain with …THIS  i can do.

  AND,  i can breathe again…hope no one caught this awful cold… !

Cheese, it makes cheese?  How did I miss this?  Where did you find that?  I need to know more, this is too exciting.

Congrats on the new Excal, you would love it even if it didn't make cheese!

It tells how to make cheese in it in the book that comes with it, Preserve It Naturally.  That's a really big book that comes with it!!!

 

I'm going to do cucumbers first.  Been waiting for the Excal!  I'll still use my round Nesco, but not as much I'm sure, because it is such a thrill not to have a big round hole in the middle of the tray!  I want to do the cucumber powder I read about in another topic somewhere here…..  Do you peel that before drying to powder???  I've never dried cucumber before.

We LOVE slices of dried cucumber, and summer squashes, just to eat as snacks!  (OK, we are admittedly weird here.)  Much better for us, and they taste better than the fried stuff that comes in bags.  Cheaper, too!

No, but we usually just eat them.  To add to something else?  Probably not, but I am soooo lazy…

Hooray!!  Dehydrating is so much fun!!  The tomatoes came out great, now I have to find something else.  :D  Apple season is about to start, I may start there.  And I really want to try the watermelon like Cincyjojo did!  And ground beef!  And eggs!  And…….

I have the feeling that by this time next year, I'm going to have an Excal too, if my new garden does well.  :D

Wearing cowboy boots does not make one an agriculturist….Having at least 3 varieties of poop on them does.

I didn't get the big book, bummer now I'm missing something.  Perhaps you'll share with us….  If I wouldn't peel the cukes to eat raw, I don't peel them to dry.  Make any sense?  Don't powder until you're ready to use whatever.  Powders seem to draw moisture out of the desert, they also don't seem to retain their flavors as long as more whole dried goods.  At least that's what I think.  Also, on the dehydrate2store website she makes pickles from dehydrated cukes.  I haven't done that yet but if I get some cukes….  Have fun.

The book is big, almost 200 pages!  And big-size pages, too–like the size of a BBB.  It's really good, too–has all the info, easy to find.  Best one I've seen yet.  Thanks for the tip re not powdering till I'm ready to use!

 

I've got it filled up with cucumbers now.

Though that one says hardcover and 140 pages, and mine is softcover and 196 pages.  Third Edition.  The copyright says 2010. The cover is the same and looks like the same book otherwise.  It's expensive!  I'm glad mine came with the dehydrator!

Thanks for the link Suzanne.  I'm going to check that out.

I just took peaches out of my Excal and now have apples ready to go.  I love having yogurt with dried peaches in the middle of winter.  If you mix it up the night before it tastes so much like fresh peaches, love it!

 

I've made the greek yogurt sauce, it starts with a tzi… with dried cukes and my kids couldn't tell the difference.  I'm looking forward to your posts about what you're doing with your Excal!

In case anyone is interested, I just checked and the book Preserving it Naturally is cheaper on Excalibur's website than from Amazon or Half.com.
