Pickled Okra turned out Slimey! Yuck!

I have always pickled our Okra from the garden….and never had this issue before.  This year when we went to test it out, it was soft and slimy not firm and crispy like it should be.  I know that  I heard about pickle crisp at the retreat……

Tell me what went wrong this time…..it's all of my okra…not just one or 2 jars….

Was it the same variety that you always grow?  If you've always pickled it and this hasn't been a problem, I don't know what to say!

Different water? Did you move recently or dig a new well?  That's been a problem for me because we have a new well and our water is different from what we had before.

Different salt?  Maybe with or without iodine?  Did you run out of your normal salt and use something different?

Same recipe I should think…

How about in the garden, maybe lack of rain or too much rain made the plants produce more er… what's that called in okra, mucilage is it?

I'm sorry this batch turned out yucky,,, but it happens to us all sometimes, sad to say.  (though not to me with okra!  I'm a real yankee when it comes to okra!  I like lots of other southern things, but NOT okra!!! bug-eyed )

Did you process your pickles for longer than normal?  A few minutes longer in a boiling water canner can make a big difference in the finished product.

Another yankee here where okra is concerned . cooking it does tend to make it slippery. Calcium chloride and pickling lime are there for keeping crispy in the pickles. I like a little okra in a gumbo but I don't go out of my way to find it.

Was all of the okra from one batch??  I have read that with cucumber pickles, if any of the blossom is not washed well from the cucumber that it will result in soft pickles.  Some sort of enzymatic action.  Could there have been something like that?

Another thought–was the vinegar 5% acidity?

Guess I'm just throwing out all kinds of thoughts, but I hope you can figure out what happened.  I've made pickled okra a number of times and never had this problem, so I want to know what it is and avoid it myself. We LOVE okra!!

I go out of my way to find okra in gumbo…so I can pick it out and throw it away! Never did see a reason for that slimy stuff. I can eat it if I have to…you guessed er Chester…I am not from the south.

Sometimes if okra is a bit bigger there is more of the slime factor. Sorry your pickled okra did not turn out well after all that hard work! hissy-fit

Thanks to all of you kind folks for your thoughts and…..er dislikes of the Okra family LOL.

I did pickle some of the first batch with vinegar that was NOT 5%….because those came out more soft and so I "googled" it.  This was BEFORE attending my retreat and finding all you lovely folks…..

So I thought that was it……and I went out and bought 5% acidic vinegar…..but I'm thinking that perhaps it might have been that they were cooked  too long.  Last year I did them in the pressure canner…..this year I just water bathed them….

That is all I can figure.  Can I use that pickle crisp stuff in them?

And Yeah. Buckeye….they all came from the same garden, same soil etc., no new water, we have well water….

My family loves the pickled okra so I made a ton of them….I don't mind them being a little bit softer, but my husband refuses to eat them when they are the least bit soft….don't know what to tell him lol.
