It's DUMB QUESTION time again!

So, how is the steam supposed to get from the bottom chamber to the top chamber?  After two and a half hours of boiling and simmering a little over two pounds of tomatoes, what I have is hot water in the bottom chamber (much of it escaped around the sides to the outside air), a couple of caramelized spots in the middle chamber where some juice from the tomatoes dripped, and some wilted tomatoes (halved) in the upper chamber.

Yes, there is funnel sort of thing that I thought was supposed to channel steam.  However, the solid middle of the top pan rests on top of this funnel thing, so very little steam gets around it.  Enough to eventually get the lid warm enough I didn't want to keep my hand on it, but just barely.

Usually operator error is the issue here, but perhaps this is a design flaw?

Pete, I can't imagine what could be wrong.The steam in mine doesn't escape around the sides. 2 and 1/2 hours should have juiced everything out and basically just left skins and some pasty pulp in the top with juice in the middle section.

Mine has a small solid area in the middle that rests on the cone but that doesn't prevent it from  steaming. I am concerned about the steam escaping from the sides…it shouldn't do that.

Maybe someone else can help…this has me befuddled!confused

Well, after letting it sit for a couple of hours, there was some juice in the middle section, and the tomatoes look more broken down.  Soooo, I've turned the burner back on, and am boiling it some more!

Maybe I just kept it more on the simmering end of the scale and should have had a more rolling boil?  Dunno.  It's rockin' and rollin' now!

Ok …I keep mine at a pretty good boil. My steam all goes up but not out the sides.

Well, that experiment was interesting, to say the least!  After spending all afternoon and into the evening, even adding more water, I got almost two pints of liquid gold from that 2+ pounds of tomatoes!  Then the thing ran out of water, and I have given up for the day.  The tomatoes still look like there is some goodie in them, but they have worn me out!

I always left mine on a boil, I don't think a simmer will produce enough steam.  The tomato water that comes out the tube is very good to drink, or can and add to soup,  Mushy tomatoes are the goal of the steaming.  The pulp is better for making sauces and soups, saves simmering all day then canning.

Mamajoseph, I did this last year and need to again. I clean and core all the ingredients that I want to have in the sauce – tomato, pepper, onion, peeled garlic, whatever I have – experiment with how much you want to include for pasta sauce, pizza sauce, or salsa, it is never bad. Then I steam them and collect the juice for a base that I use when cooking pasta – the flavor soaks right into the noodles. Then I take the pulp that is in the basket and puree it in the blender, which takes care of all the skins. Can or freeze and look forward to dinner. chef

I am so excited that I recently found a stainless 12 qt steam juicer at an estate sale for $5!  But, the tube or hose in which the juice flows from was old and cracked and I need to find new tubing for it.  Any ideas on what kind I should be looking for that could withstand the heat?

What a great find!

The tubing on mine is the same as what I use for making beer or wine (on airlock and for siphoning from carboy) so if you have a store that supplies homebrewers they should have a size that will fit your steam juicer.

I think it's actually surgical tubing which you might be able to get if you have a nurse or doctor in the family.  I'd cut a small piece off so you can get the right diameter.  Not sure how to fasten it to the base though!

OffonOff, when I was in Lehman's (in Ohio) they sold the tubing seperate.  I just looked on their website and don't see that, but I bet if you emailed or called them they could tell you about ordering some replacement tubing.  I don't remember how much it was, but it wasn't too horrible, or I wouldn't have made a mental note of where I could get another if I needed one down the road for my steam juicer!
