I think I may attempt some blueberry jam this weekend … have to go and pick blueberries at some point.

My neighbor always made the crock pickles…I'll have to see if my mom has the recipe.  I have a lot of the old German recipes…I'm sure I have one…but when I'll get to lookin' is another matter.   Bug Eyed

Suzanne, Lime pickles are very crisp, somewhat transparent, sweet pickles ! They first spend a night soaking in pickling lime. I use them in all my salads (ham, chicken, potato, tuna) and I have to slap myself when I start eating them like potato chips.! They are labor intensive, but I wouldn't live without them!

Sometimes,I live in my own little world, but it's okay because they know me here.

i have made 2 batches of kraut in a bucket, a five gallon bucket of pickled corn, and canned 13 pints of beets.  not a hole lot coming on in my garden right now.  we really need a nice soaking rain.

We're canning the sauerkraut that we started three weeks ago.  So far, we've got 6 quarts cooling and 6 quarts in the water bath canner.  That should be enough for adding to the perogy filling for our 3 to 4 perogy making days throughout the year, as well as for spreading between the layers when we make cabbage rolls.

Now we'll be switching to filling pints. 

I have a feeling we might be running out for more jars later today.

Are you going to tell us about your perogies and how you make them???!!  I'm curious!

This is something I'm super worried about–running out of jars.  And I got boxes and BOXES of free jars from this guy who was getting rid of his mother's stuff.  I want to can so much more stuff than I did last year and I'm still really in the early days of canning.  I only started canning a few years ago.  I don't have enough jars!!!!

Everyone around here seems to be in agreement that for every day pricing, Big Lots has the lowest.  However, we happened upon a great deal at Foodland one day, so no source should be overlooked.

Down side is that Big Lots inventory around here is limited to regular quarts and pints only.  So far.  But Kroger has been having some good deals on canning extras lately as well.

I worry about running out of jars too.  Haha  I only have 12 half pints and 12 pints, so I figure I will run out soon with all the canning I intend to do.  I don't even hae any quart jars, so I will have to pick some up so I can do my spaghetti sauce.  I got my jars at the grocery store where they were $8 for 12 half pints and $10 for 12 pints.  How much are they at Big Lots?

I paid $6.75 for a case of 12 pints at Big Lots a few weeks ago.  I don't know if they still have any left, but that's where I'd go first.

Big Lots should still be taking delivery of canning jars for a while.  The ones I frequent get more in every week, but not forever.  Maybe some day they will have more than just the regular mouthed quarts and pints.  Have noticed another problem with them – they have the lids, but only packaged with the rings.  A decent price, but I have plenty of rings, and will only need the lids.  Not this year, but when all these new jars are used next time…

I found the lids, too.  They were 1.25 per dozen, and they are the Golden Harvest ones with just a plain gold lid — no design, no Kerr advertising — just room enough for me to write the basics on the lid.  Maybe you can't find them because I bought them all! Smile

We were in Muskegon this morning for bloodwork, so I waited in Big Lots parking lot until they opened at 9.  I needed some jelly jars (looking for 4 oz, but they only had the 8 oz).  There were cases and cases of the quarts, pints, and 1/2 pints.  Each case, no matter what size was $6.75.  These all had lids, the plain, no advertising lid.

I think I have enough of the pint and quart jars for the rest of my canning, but as I'm doing my jams, I realized……dumb, dumb……..you gave away your jars last year with the jams in!  So I'm going to have to remember to look for 1/4 pints and 1/2 pints in my yard sale/thrift store travels the rest of the year.

Half pints!  They had half pints!!  Have never seen them around here, so will stop next time I get to town.  Hurray!!

I just took pints of pickles out of the hot water canner and was stunned to see one jar was broken.  I've never had that happen before.  What makes that happen????

The jars ARE used–these are some old jars (I don't know how old) that someone gave me that were his mother's.  They looked fine.  I didn't notice any cracks in the jar beforehand.  (And it is a regular canning jar, not like a mayonnaise jar or anything like that, I only use real canning jars.)

I found the half-pints at Big Lots back at the first of June.  I bought about 8 cases of them to make jams/butters/jellies for next year's farmers' market.  I'm going to be prepared to wow them with my offerings.

That happens rarely to me also but it happens now and then and I also have old jars plus mayo jars, etc. Have not seen any higher breakage % from old, new, mayo – all the same pretty much for water bath anyway.

Most likely cause is a stress point in the glass where maybe someone was fishing out a pickle or whatever and dropped the metal knife into the jar. The glass doesn't break but it may have caused a weak spot. Sometimes I have had a jar bottom crack right off as if scored with a glass cutting tool Yes

Jeff Smith, the Frugal Gourmet, was adamant about never using metal in glass jars ever – he used bamboo spoons LOL.

The other cause can be thermal shock. If the filled jar is not as hot as the water when you lower it into the pot, breakage can occur. Always best to have the water only as hot as your jar contents and then heat up slowly after all the jars are in.
