Today was a busy one…

8 quarts of crushed tomatoes

5 quarts of spaghetti sauce

5 pints of pureed salsa

11 pints of Dede's Wonderful Salsa

 

60 pounds of tomatoes down, only about 140 more pounds to go and I'm set until next summer.

I did 8 pints of spaghetti sauce this weekend.  It was slow compared to the 30 pints of crushed tomatoes I did 2 weekends ago.

 

I'm a bit new to preserving, but I love to be able to taste our yummy garden in the winter!

Working in apples today…apple pie jam and apple butter. I also steam juiced the peels and cores from the apple pie jam session. Apple pie filling will have to wait a day or two…I don't want to labor all Labor Day.wink

Cricketjett, what's your secret to good cucumbers?  I've never been able to grow them.  They ALWAYS look really good and healthy, but before I get any cucumbers, the vines just wilt and die.

Finally, FINALLY, got something canned and am able to brag about it on the same day!

Just 5 half pints of pineapple jam, but it's 5 more half pints of pineapple jam than we had this time yesterday.  There was barely enough for a good taste left in the pan.  That taste was VERY good. 

Not sure I ever did share the day a week or so ago that we did 10 pints and a little bit of Dede's hot dog chili.  It sure has been a hit with all who have tried it so far.  Hmm.  Maybe it was two weeks ago – before Labor Day in any case.  (Our summer has been very fractured this year.  We've met ourselves coming and going a couple of time!)

 7 pts split pea & ham (froze this); PC'd 8 qt chili & beans and 16 qt tomato based garden veg soup w/meatballs.  Hearing that sweet sound of "pinging" right now = successful wkd!

Doing some freezer cooking and some pressure canning today.  I wish I had a pressure canning guru standing next to me, so I wouldn't keep second guessing myself until I got the hang of this!

Last week was 18 qts  and 7 pints of raw pack tomatoes. Yesterday 14 pints of chili sauce for my mother. She used to make it by the hundreds and sell it, but she is unable to do it any more. I had her "supervise" me while I did it in her kitchen. She was able to peel and chop the onions while sitting at the table. I don't think she was really excited about the idea of doing it, but when it was all over she was thrilled. We have had lots of changes/challenges this summer with my father dying and my mother's rapidly declining health, but the smell of chili sauce cooking made us all feel like we are going to be just fine. One of the wonderful things about canning is that it keeps us connected to our family, traditions and culture. No matter what is happening in our lives, chili sauce will remind me of what is important. The recipe has been used in our family for at least 5 generations. My mother gave me my grandmother's hand-written recipe card yesterday and I had all I could do to not cry.

Frost warnings are in effect, so today I shut down my garden, and so I was left with about 25 pounds of green tomatoes.  

Four beautiful quarts of green tomato mincemeat are out of the canner.  

My house smells like Christmas!

Care to share your recipe? I almost made some this year, but I've never used green tomatoes for it and didn't want to risk an unknown recipe.

I was kind of wary, never having done anything with green tomatoes other than wait for them to ripen, but with the weather so wonky, it didn't look like anything would ripen, so I took a leap.  

And am I ever glad I did.

First time posting on this topic. Just canned 6 half pints of apple butter. My first canning attempt. Haven't heard the "pings" yet on the jars though. Hope I did it right!

Remember, if it rains on your picnic it's also raining on your garden!

7 quarts of turkey stock, 4 quarts and 4 pints of veg stock….

productive afternoon, and even better, the turkeys were given to me by a co-worker, and the vegetable scraps for the veg stock were from my restaurant, so this is all free, found food

A couple of days ago we did 32 pints of apple butter. ( A friend has a tree that they were just letting the fruit drop from.) 

Today we are putting up the beef stew.

7 quarts of Birdi's Vegetable Soup are in the pc!  It is soooo good.  We ate some, canned these 7 quarts and there remains 1 extra quart for eating later today.

Seems very weird to be canning today.  But, we have done everything we can to prep for this storm,  It's chilly out and rainy.  Our gov has requested that everyone who possibly can stay home.  So, canning seemed in order today!

I got a call last week from my youngest son…" Mom if I bring all the ingredients will you help me can some chili?" Those words were  like Happy Mother's Day, Happy Birthday and Merry Christmas all rolled into one! happy-feet

Yesterday afternoon we canned chili! He had the chili all cooked when I got home from school and I taught my 28 yr old son how to use the pressure canner. Good times.happy-flower

He asked questions and did all the work. Thanks to CitR I could answer most of his questions …what I didn't know Ball Blue Book did.

BTW that chili is mighty good tasting!french
