What to do with fig syrup???

I have been making a good many fig preserves, and seem to be winding up with an abundance of leftover syrup.  We can only eat so many waffles or pancakes, so I am looking for suggestions for using the extra.  One friend (who is of Middle Eastern descent), makes a plain cake and "dries it out" in the oven, sort of like biscotti, and then soaks with the fig syrup.  I'll be sending her another quart this week.  Any other ideas greatly appreciated!

The title of this post drew me in, and I couldn't resist looking up 'uses for fig syrup'.  I found this very interesting site, and while I'm not sure if it applies directly to your question, at least it might help, since you actually have some idea of what to look for.  :D

Try reducing the fig syrup to the point of it crystalizing like they do with maple syrup to make maple sugar. It would be great to use for cookies and confections for the holidays.

Thanks for the ideas, and the interesting sites.  I learned stuff about figs and sugar that I didn't know!  I think I may try reducing the syrup to crystallize it and I'll post back to let you know how it goes.  It will be the weekend before I have a chance to experiment.  I'm busy dehydrating figs now!
