OfflineGenerally you cut the scapes off soon after they appear. On elephant garlic the scapes are delicious and mild. I cut off about 6 to 8 inches and cook for 7 minutes in a little water with butter added until tender. Butter and salt bring out the flavor. The rationale for removing the scapes is to prevent the bulb from using up it's energy to flower.
Off with their heads! The first year [three years ago] I planted garlic I didn't trim anything and had puny heads at harvest. So discouraged didn't plant garlic for last year. After a bit of reading, I'm ruthlessly pinching off anything that suggests 'bloom' this year. Ditto with ALL of the alliums. This year is my first year for shallots (Matadors, what a name!) and, oh joy, they are monsters! Can't wait.
I'd read about eating scapes but doubt I can coax my family into trying them … aside from wanting sizable production underground, am not lettin' any plant spend energy on blooms.
