Does anyone know the actual name for Peas & Snaps?  My friend is from NC and that's what she calls this pea dish.  She raves about them!  Cooks them like pinto beans, although some of them are still young peas that are left in the shells (snaps).

I thought I might buy seeds for next year's garden, but I don't know what to look for!

I think they're just un-dried field beans cooked very simply with green beans tossed in towards the end.  One of my favorites is the opposite as far as balance of field vs green beans called  " green and shelly beans " which is mostly green beans with just a few field beans tossed in.

I've never heard the term "Peas and Snaps", but when we grew our own (okay, when Granddaddy grew them), the pink-eye purple hull peas that we shelled we put the "snaps" in.  Snaps were the pea pods that got picked before they were big enough to shell, so they were broken into approx. inch long pieces and cooked in with the pot of peas.  We always seasoned the peas with a piece of fat-back or streak-o-lean (both pork products).  Buying seed you would look for purple-hull peas, or pink-eye purple hulls.

Peas and snaps are just any fresh peas, and the snaps are very immature peas.  Just snap them like string beans, and add them when the peas are halfway done.  Every southern country gal knows what peas and snaps are!
