We put two more spiles in. We got good trees too! The new jugs were pretty full. We collected 30 litres from all of the trees today.
Well, I have taken oodles of pictures, but haven't had the time to post any yet. We have our first batch ready to boil down to the finish and started our next batch. We decided that was better done tomorrow.
We did something else fun…the partially boiled down sap tasted so good! We took some more out and made some tea directly in the sap in some cups. REALLY nice! So we had…HOT maple vanilla rooibos tea. What a treat! I thought of you all too as I was sipping it oh so slowly! I think that we will try to freeze some partially boiled down sap for this purpose later on. I hope it will keep in the freezer. All we would need to do then is heat it up to a boil and throw the tea bag in.
We sure do smell like wood smoke. It makes me want to go camping. One day we will have to cook supper out there too. Not tonight, though…it was snowing! We'll see how the sap collection goes over the next couple of days. If the sap freezes in the jugs, it is okay, as long as the trees co-operate and stop dripping for a while!

Thanks for sharing, maple syrup making is just not done down south, but there are still a few oldsters who grind sugar cane and make syrup.

That is so interesting! I would love to see and try sugar cane some day. It is not something that would ever grow up here!

That tea sounds wonderful, LK!!! Sap will keep in the freezer. Actually, if you can't get all of your sap boiled down, it can be kept in the freezer for quite a while until you are ready to make syrup.

One little old man who lived up the road when I was a kid, had a big shed and grew his own cane in a creek bottom. Under the shed, he had the grinder, and he some how hooked up the mule to a harness, and he would walk around the round grinder thing for hours. The only time I have seen this since is at a plantation outside of Charleston, SC and then again in Helen, GA. Very interesting.
