does anyone have a tried and true recipe for a flaky piecrust that you pat in the pan and not rolled? I used to have one that I used for strawberry pies and cream pies that took oil and milk and were real flaky. I want to make a strawberry pie for my husband today.  Thanks!shimmy

I used this one from FBR last fall for something (can't remember now) and it was really good!

This is the one I use.

4c all-purpose flour

2c butter flavored shortening

1T sugar

1t salt

1/2 c ice water

1 egg

1T white vinegar

In a large bowl, mix flour, shortening, sugar, and salt.

Add ice water, vinegar, and egg. Beat to combine. Press into pie plate.

I have also used a homemade graham cracker crust for strawberry pies. Very good! fork

This is the one I use and is the best crust I have had.

1 1/2 cups flour

1/2 cup +2Tblsp vegetable oil

3 3/4 Tblsp. milk

1/2 tsp. salt OR 1 tsp. sugar

Mix in pan with fork and press to cover bottom and sides of pan.  This process takes about 4 minutes total.  I add the salt for a savory crust or the sugar for a sweet one.  Bake as instructed for pie.

Alright, I just went to FBR and saw a crust just about like mine except for proportions so I guess I am in good company!

Where are we going and why are we in a handbasket?

I used this recipe tonight to make a blueberry pie for a family dinner.  There is no pie left, so I'm guessing everyone liked it.  I was a bit skeptical at first.  The dough wasn't at all what I expected but is turned out very flake and short.  I'll definitely use it again.

Here's a pretty simple one; if you brush it with egg white it should be flakier, too.

1 cup flour

4 teaspoons ice cold water

2 tablespoons sugar

8 tablespoons butter or margerine

I just made a mulberry pie with it.  Not sure if they're really mulberries…I guess we'll find out!  ;)
