 This morning a baked a small batch of lemon cupcakes (6 jumbo) and this afternoon I am going to bake a large batch of granola, I love granola but it is too pricey for our budget so I bake my own. I still have a few nuts and dried fruit left from the holidays and plenty of oats.

It is so very cold here with so much snow on the ground and another round coming in tomorrow 3-5 inches, unbelieveable---the coldest Feb in history for our area, we had 2 hours of above freezeing temps in 16 days. Mother Nature has really shown the rath of her temper this winter.

Just put a butter pound cake in the oven.

For a topping, I am using a can of peaches, draining the juice, into a sauce pan, add a little of brown sugar and a touch of butter,a smidge of nutmeg, bring that to a boil, thicken with a little corn starch slurry, add the peaches for a few seconds, put into a bowl and cool, that will be the topping to put on a slice of pound cake. One could add a little of whipped cream if one so desires wink

Yesterday I made a blueberry pie, and mac/cheese with crumbs/bacon on top, to take to a snowmobile club potluck. Someone brought green bean casserole only with fiddleheads instead of beans, yum! Someone else brought a whoopie pie cake. We eat really good there...

Remember, if it rains on your picnic it's also raining on your garden!

Baking an apple pie that I saw on Trisha Yearwood's show, baked in an iron skillet, looked interesting, so I decided to try it.

Today I baked Suzanne's iced oatmeal raisin cookies (I iced them too) and  a batch of chocolate chip cookies.

Blueberry sour cream pie sounds yummy, rileysmom! Would you be willing to post the recipe on FarmBell? I'd like to try it, have blueberries in the freezer.

Today I am baking orange flavored cupcakes with a cream filling, I am going to ice them with a butter cream icing with some added grated orange peel and do a little orange squiggle on top---you know, like the ones in the store have on top wink

 For the filling I use a recipe called Mock Whipped Cream,  about 40 years ago, a client gave me the recipe, and it never fails, it can be use as a filling or you can use it as a frosting for cakes etc. Since we are asked not to print recipes on the forum the recipe can be found on several places on the the interent.

This morning I am baking chocloate oval shaped layer cakes as gifts for two of our neighbors. The layers will be split in half and them a filling of cream put between them and when put together one will have a chocolate frosting and the other a buttercream. I hope to decorate them with a coconut nest with some baby bird jelly beans in the nest. I should have purchased extra jelly beans, I love them!

 Just put a cake in the oven, hopefully the weather will hold for a while.

           Hubby was watching TV a couple of days ago and saw a cake on the food network that he wanted me to bake---a dump cake, made with cherry pie filling and crushed pineapple, dry cake mix and butter pats. Dump cakes have been around for some time now, and I have baked them in the past. My favorite is a cake using cherry pie filling and dark chocolate cake mix,  when served topped with some whipped cream, it tastes a lot like a black forest cake. They are easy, fast, non fail, and transport easily.

Those dump cake recipes sure are easy.  Yours with the cherry pie filling and pineapple sounds scrumptious!  All I can do is dream about eating them right now, though, for I am on a low-carb diet.  I keep falling off the wagon (heck, I jump) but have to climb back on each time.  Russell Stover chocolate bunnies (solid) are my latest downfall.    I adore chocolate!!!!  

My favorite cake is a thick, gooey chocolate one with high mounds of chocolate frosting all over it.  I use to tell folks not to make me a cake for my birthday, just hand me the bowl of frosting!

This carb diet is working though, even though I keep making "exceptions".  I started out as a size 3X last June and I am a 1X now.   I just have to celebrate all of the holidays.  hehehehehehe.

No more holidays until 4th of July, though, so no more excuses .....for a while.    chef

I am frustrated, so I now have 2 questions:

If all comments must be approved by moderators, why aren't moderators coming on line each day to do the approving?   It seems to defeat the idea of having forums if people can't contact each other for days/weeks/months at a time.

I wish commenting didn't require any moderator-approval because then we'd be free to interact with each other quickly and this could become a lively discussion area.  It's no fun posting a response to another person's comment and then seeing your response just sit there for days on end while awaiting approval.

Inappropriate comments could always be flagged and reported by the commenters, themselves.  This would free up the moderators who, I am sure, have busy lives of their own.

I am NOT criticizing, just am frustrated at wanting to reach out to interact with like-minded folks.... and finding myself blocked from doing so simply because of the need for moderator-approval.

So.....this is just me putting in my 2 cents' worth.  (probably not worth even that much!).  :-)  happy-flower

I am baking red velvet cupcakes with cream cheese  frosting, I plan to take some to our neighbor, too many in my kitchen will result in too many that I can't resist. wink

This afternoon I baked a dozen Mango cup cakes. I purchased a box of mango cake mix some time back and made a pound cake, it was delicious. Today when I baked the cupcakes with a box of the mango mix, I also added a pureed fresh mango, used an extra egg and milk instead of water, and frosted them with cream cheese frosting (if in doubt, use cream cheese frosting) they are so good, very moist and flavorful. I started the frosing using a pastry bag with a tip, didnt like the way it looked, I like the frosting to cover the whole cake, not just a coil on the top. happy-flower

happy-flower Remember Bananna Flips?  They were/are on of my Hubbys favorite store bought snacks, we have not seen them for years, well he went to the gas station the other day and he came so excited, he found them there. Yesterday I was out so I stopped at the station and purchased 2 of them for $1.40 each and they were much small than they used to be. Today I am baking a bananna flip cake, I have baked them in the past but forgot about them, they are so yummy and easy.
