Made some cinnamon swirl quick bread this morning...from a box mix surprisedNot nearly as good as from scratch, but I baked it. Joelle, yours sounds so much better.

  I have really missed baking so today I am making a dozen jumbo cupcakes, lemon cake with cream cheese icing flavored with lemon zest.

 Today it is overcast, rainy and a bit foggy. I want to bake something that makes the house smell good so I decided on cinnamon rolls. I had some cream cheese icing left over from the cupcakes I made last week, that should go well on the rolls.

 Anyone that knows me well, know that I love pie pans, I have collected them for nearly 65 years. I love baking pies and will once in a while give a pie as a gift in one of my pans, if the recipient love old kitchen items as do I. This past weekend I received a cast iron pan, it is not an old piece but it is something I have not seen before, so today I am baking a fresh apple pie. I am so anxious to see and taste the results.

   Results---this pan made the best apple pie I have ever baked! It reminds me of pies bake in my Grandmother's big iron stove, the crust was baked to perfection both top and bottom, it was golden brown, I was a bit worried about the crust sticking, but it came right out when sliced, for me it has put a whole new perspective on baking pies, I really like this pan and have purchased another.

 Woke up this morning and was craving a custard pie, we have not had one for ages, I made one for us and one for our neighbor that has not been feeling well and I know she likes custard pie as well. Pie is good medicine wink

    Another overcast and rainy day here, a nice day for baking. Today I decided to bake some chocolate chunk cookies, I have a bag of the small semi-sweet candy bars from the holidays that no one seemed to like, so they will be rough chopped  along with some pecans and turned into cookies.

 Today I am baking rhubarb pies, one for our neighbor and one for us. I love rhubarb and have had a time growing it but this year we finally had a good crop.. I think it must have something to do with all of the rain we had this Spring. I have picked and vac-packed and frozen enough for 6 pies in the future, I hope to bake one for Christmas and be able to have my two favorite pies, mincemeat and rhubarb. In the markets around here rhubarb is selling for about $5 a pound. I remember back when the farmers around here couldn't give it away, I guess it is one of those that folks are rediscovering, like so many items that used to be everyday fare but are now labeled as gourmet foods. Remember when chicken wing were priced for very little?wink

   This morning I naked a Hummingbird cake, had bananas that needed to be used, as soon as it cools I will frost with cream cheese icing, such a delicious cake and so easy to bake.

 This morning our neighbors daughter came to our house for a "baking lesson". Her Husband is in service and will be home around Thanksgiving and she wants to be able to bake some of his favorite things one of that being pies and another biscuits. He doesn't like the biscuits in a tube or store bought pie crust, his Mom is an excellent cook but lives many miles away in another state. My young friend's mother redid her kitchen last year, it looks beautiful with all new everything, the thing is, she neither cooks nor bakes, she and her hubby eat mainly carry out or delivery.

   This morning we baked biscuits and a peach cobbler and a baked shell for a chocolate pie. She did very well, her Hubby will be very happy. This young lady is also into retro in her kitchen, she thinks it is "cool" that I lived through that era, I sent her home with a couple pieces of Pyrex and a Corning ware perker coffee pot, I have one that I use quite often and she really admired it and we had an extra one, so now it has a new home. I made coffee for us while she was here and she really enjoyed that a lot. It is so nice to see young folks interested in "old timey" things.wink

 This morning I decided to bake a couple of custard pies, one for us and one for a friend, I stocked up on eggs when we went to Sam's Club and need to use a few. Love custard pie.

 I have not done much baking because of the heat, but I decided to bake a couple of items for night time snackswinkI love baking from scratch, but don't always have the time or energy, so I keep some box mixes in the pantry. Growing up in a large family and helping my Mom, she never used any kind of box mix with out adding something of her own, I tend to do the same, makes me feel less guilty. Since I don't  want to use the big oven, I am using  the countertop oven, I am using half of a box of cake mix for Hubby to make a German chocolate and half of a box of brownie mix for super chocolatey brownies, just the right size for two people. Have chocolate and milk, will go to bed happy tonight!

I have not been doing any baking for the same reason, Joelle, too hot.  I did bake a casserole in my electric skillet a couple of nights ago.  Worked perfectly.

I also have only 2 people living in this house and a whole cake is just too much so I will make the cake or whatever I am making/baking and then split it up into several smaller pans.  Then after it has baked I will freeze the rest of the cake/bread whatever so that we are not tempted to eat it all that day/week.  Trouble is I tend to forget it is in the freezer and shame on me.

  This morning I baked a pineapple upside down cake for Hubby, I always bake them in a very old cast iron skillet, but this time I had to use 2 smaller skillets, the large one is getting to difficult for me to handle to turn the cake out of the pans.

Made a Sour Cream Lemon Tart (with made from scratch crust) and a chocolate cake (with chocolate ganache) and a Green Grape Salad all to take to our son's for supper tonight.  All that is left to do is make the whipped cream and finish cleaning up my mess.

 So very thankful for the cooler morning today, we were nearly out of bread and I really didn't want to have to buy it at the store, except for some of the dark rye breads, we just don't care for store bought. I had 2 loaves of bread this morning, is there any better aroma than baking bread and perking coffee in the morning?

Today would have been a good day to bake here.  We also had cooler temps and drizzle most of the day.  Need to learn to use my new dough hook on my new mixer.  Oh well, always another day.

 Baking cobblers today. I worked on organizing our pantry a few days ago and found some cans of pie filling that I want to use, so I am making cherry and apple cobblers today, not real large but enough for the two of us. One cherry cobbler for after dinner this evening and the remainder will be frozen and vac sealed for later.

 Woke up this morning to yet another rainy day---it seems to never end! There are places that never dry out enough to mow. This appears to be a good day for baking a nice big batch of chocolate chip cookies, and maybe share a few with neighbors. Got plenty of milk wink
