Apple Jelly may not have set - what to do?

Okay, so I had a bunch and I mean 2 boxes full of apples.  I made apple butter, applesauce and my husband is making apple wine!  I had some left over this weekend and decided to make apple jelly.  The recipe called for 3 cups of apple juice, and I had 6 cups.  The pectin was one box and 5 cups of sugar.  So I doubled the recipe for everything EXCEPT I didn't think to put 2 boxes of pectin in my recipe.  Should I have doubled the pectin?  I have never used that stuff don't know how to use it I guess.  But I did add the second box of pectin and brought it to another boil and put it in my jars and processed them.  When I tilt my jars, it looks a little runny, meaning the contents move.  Not sure how else to splain that one LOL.  Can I take it out and reboil it?  Or do I chalk it up to a loss? Thanks!no

I'll let others chime in what you're able to do as I don't think you can re-boil it, but….

Don't chalk it up to a loss!  Just re-allocate it!chef  Use it as a syrup for pancakes or topping for ice-cream!  Add stuff to it and make a pie.  You get the idea.  Don't toss. Use.

I can sure relate to your situation Banjobetsy.  I had a similar thing happen a couple of weeks ago.  Like SarahGrace said repurpose it as syrup, glaze (for meats, etc),in smoothies.  Well, you get the picture.

Oohhh!  Glaze for meats!  (Good one, mamajhk! ) We love apples on top of our pork chops so I bet that your "jelly" as a glaze on them would be yummy!

This has happened to me Betsy, and I just put the whole batch back into the pot, added more pectin, brought it back to boil, then put it all back into the jars and processed again.  It worked for me, and everything looked and tasted great.

Frankly I don't mind soft set jelly. Sure stays on the biscuit better!
