OfflineDoes anyone have any big preferences for any certain type of bean? I've just used whichever I found, and they were in smaller quantities at a local store. They were a decent enough price, and I was happy with the results, though I figure with all the help here, my next batch will be better. I made a fairly small bottle and am just now running out, as I said, it was good, but I thought I'd ask here before I ordered more from a site for the next batch.
Oh, and I thought I'd read that a lower proof vodka extracts the flavor better than a high proof kind or even the high voltage 'everclear'. Does anyone else remember reading that?

OfflineYep, I saw that and remembered that I thought the same thing too before I made that last batch, which was probably close to two years ago… I've been looking things up again and am seeing the same thing now that I go back to read about it some more. 70 proof is what works best, but I will probably use 80 proof again because that's what is commonly available.
I'm getting ready to brew up another batch now, this time bigger so I have plenty to give as gifts to those who will appreciate it.

BG, I found this on another vanilla thread (b/c I was sure I'd read that somewhere, too!) http://chickensintheroad.com/f…..la/page-3/

I just want to throw this out here for discussion. I've only used 80 proof vodka (with some rum mixed in which works great) so I don't know from experience what a stronger alcohol would do.
When I was making my vanilla I wanted to learn as much as I could about it. One site that had tons of information, http://www.instructables.com/i…..xtraction/ , says that a really high percentage of alcohol may be counter productive. The vanilla extract sold in stores is 70 proof or 35% alcohol.
"Best Extract Alcohol ConcentrationA bit of definitive info on the best concentration of alcohol for extracting beans:Glenn at Amadeus Trading says that his company starts off with a relatively "pure" alcohol and then adds water to get it to 35%.According to this great lit review put together by Garth at Heilala Vanilla, a 1995 study showed that 10% more vanillin was extracted at 47.5% ethanol than 95% ethanol (pdf page 16)."

When someone buys from the organic vanilla bean company again, can you please post that you have here? I just went through their entire product line, and it all seems to be out of stock, unless that's what they display to everyone unless you register?
Thanks!
Judi
I sent an email on 6/21 to this company about their inventory (or lack of). Got a reply today!
>> Hi Cindy,
Sorry for the delayed response but I have just returned from Papua New Guinea! Thank you for your continued interest in our products. As you may be aware, we have had some difficulty bringing our crop to market in 2010 caused by the US bank who financed our plantation operations in Papua New Guinea withdrawing their financial services for activities outside of the USA. We have now managed to solve this problem. We also had some quality control issues and rather than ship an product of lesser quality we chose to wait for beans that were up to our normal standards. We are now very close to shipping vanilla for distribution by mid to late October.
We will be sending an email update once we have a firm delivery date so you can plan your purchase.
Thank you for your continued support.
Sincerely,
Vicki

I just checked The Organic Vanilla Bean Company (from just above) and they are still Out of Stock….so don't know their pricing either.
Glad you're able to get your money back easily, though.

OfflineBeware! I noted all those things too. Which is why I felt confident to order. I was even given a tracking number, date of delivery and a confirmation email. The next day when I checked the tracking info there was no package movement. Waited another day still no tracking movement. Emailed the seller and I did not get a response. Delivery day came and went and still no tracking number movement and no response from seller. Finally I contacted Paypal and they are taking the issue from there. So Beware! because it all looked legitimate to me too.

OfflineI ordered from them Thursday (just to check it out! Ebay would reimburse.) and I have a tracking number with activity on it…it's in PA as of yesterday.
Maybe it was just a glitch, aprilejoi.
