Help! I am hosting a brunch with friends next week to discuss our upcoming trip to New Orleans. I thought a Cajun-themed menu would be fun and get us in the mood, but I have no idea what a Cajun breakfast is. Maybe it is exactly the same as an upstate NY breakfast,but I doubt it. I know there must be some Cajuns and Creoles out there to show me the way. Also what's the difference between a Cajun and a Creole anyway? Any ideas would be great. I have until Sunday to get it together. Thanks as always.fork

I don't have any specific suggestions for brunch, other than include andouille sausages as one of the meat choices.  

However, Cajuns are French Canadians who worked for the Americans as spies during the war of 1812 who emigrated to the southern States after we won.  Creole is the culture that blended in Haiti and Hispaniola during the years of slavery, blending west African, local indigenous people and the French.

Both very rich and strong cultures, but very very different.

Shrimp and grits!  Beignets!  Chicory coffee….Uh, yeah, now I've run out of ideas.  :D  Here's a local VERY TASTY cajun place that has a killer breakfast.  Check out their menu for some ideas.  :)
