and NCHFP calls for 1" headspace.  I've finally gotten my head wrapped around the headspace issue!  It's very important!

My thought was………packing the jar with apples first then putting in the syrup may have more apples in than mixing in with syrup them pouring in, making more possibilities for air pockets.  My apples are totally done, almost on the mushy side even.

From last year's batch (prior to my knowing to remove rings!), I do have one jar left that I cannot get the ring off!!!!!  I have a very high feeling that jar will not be good or will explode if I ever do get it off!  I'm going to soak it in hot water, maybe the goo has glued it shut……………………..
