You can't make an open fire hot enough to damage a cast iron pan. But you can crack one if you take it from a hot fire and pour cold water into it. Just let it cool naturally.

Thanks Ross.  I had wondered about that, since I have restored several pans in my self cleaning oven, but had been told that the orange peel blemish found on the bottom of some old skillets was caused by placing the pans on a campfire, etc.

That "orangepeel" blemish is the sand texture from the casting process that wasn't properly machined away when the pan was manufactured. Look at the outside of the bottom and you will see the sand texture left by the casting process the inside is polished smooth on the better ironware.

I had wondered about that, Ross.  I clean them in my self cleaning oven when I first get them, so wondered why not a fire.  I had been told it can cause the blemish.

 

Here is a neat link on cast iron history and recipes… It shows how to use a dutch oven, how many coals needed for different dishes, etc.

My cornbread skillet has never seen soap.  It gets a good swipe with a damp papertowel and hung back on the rack.  My most prized possession.
