Hello everone, CITR has the best bakers around, so I know someone can answer my question which is, can I make my rolls and buns the night before Thanksgiving and put them in the fridge and bake them the next morning? I dont have time Thanksgiving morning to do the whole bread prep.

I do this frequently if I need fresh rolls and don't have time to make them from start to finish that day.  I make mine, shape them, bake until just before they are browned and take them out of the oven.  Let them cool, cover them, and just brown them the next day.  Or I have made the dough, shaped it and placed the un-baked dough in the fridge to let it rise slowly over night.

You sure can!  It's just like the Morning Cinnamon Rolls….stick the pan (covered) in the fridge. They’ll be risen and ready for you the next morning! Bake in a preheated oven.

Great idea, btw!  I've never thought of it for regular rolls.  I make the cinnamon rolls like this all the time.  DUH!

I make the dough for rolls on one night and put it in the fridge as soon as it is mixed. I don't wait for it to rise. Just grease the bowl and cover the dough with plastic. Take it out the next day and it is cold well risin and very easy to roll thin and shape . Put the rolls in a pan and either back into the fridge or half bake them and then finish them when you want them.

Just in case you'd like another option, I very often completely bake my rolls ahead of time and freeze them in a 2 gal. freezer bag. To use, I just take them out of the freezer, open the bag while they thaw on the counter, then just wrap them in foil and reheat at about 350F. Takes about 20-30 minutes to reheat.
