I canned some turkey drums, raw pack in jars and the only bones to be found were the large primary bone the rest cooked down like the salmon bones in canned salmon. I have a bowl that fits into my canner that i often use for cooking small amounts and don't want to make a big mess.

That's what I was thinking of doing, using a bowl.  I also don't like to cook with aluminum so I can use stainless inside the canner.  I think I'll give it a try and see if I can use it for the boys… I"m sure they would love it.

If the dogs and cats aren't real young and if they aren't gulpers they can deal well with bones. My cats loved chicken bones and would chew the knuckles off each end and leave the shaft. I boiled a herring for one cat and he patiently sat there and licked all of the meat from the bones leaving a completely clean skeleton.

Wow Ross,

that is one patient cat…LOL.  The dogs are pretty good, but I won't give them cooked bones.  The 3 boys are a good size and the bones would not stand up to the biting.  They are given huge bones to gnaw on so they wouldn't know they are suppose to chew on them like that.  I like the idea of mashing them up and adding them to something else.

I am bring this back to the top because of things I have learned since I first posted it. I have joined an American chapter of a Polish sausage and meat forum: http://www.wedlinydomowe.pl/en/index.php

And have new information. I can make a very fine sausage from the trimmings of a cut up turkey. Some of the meat, fat and skin is frozen slightly and ground and some is cut into one inch chunks and mixed with the ground. It is then seasoned and stuffed into 2 1/2 inch casings and smoked and then poached. Follow this recipe but grind half of the total weight and leave half in chunks. http://www.wedlinydomowe.com/s…..m-sausage.

This recipe calls for larger casing but the smaller ones work well.
