Does anyone have a recipe for dehydrating okra to eat as a snack?  I just had some from the local grocery, and they were wonderful!  I'm thinking that you could slice them lenghthwise, maybe add a little salt or seasoning, and just put them in the dehydrator.  Has anyone tried this?  Seems like a good way to use up extra okra from the garden.    Thanks!

That sounds very tasty. Crunchy like fried okra without the fat? Are you kidding? Let us know if you try it.

Now that sounds like something I will need to try.  I put up oven-fried okra in the freezer every year.  Just roll in cornmeal and spray with oil and roast in the oven until crispy and into freezer bags (if it makes it that far…), I love okra!

I do use Pam.  Spray the pan and the okra.  Bake at 350 for 45 minutes to an hour.  Stir every 15 minutes or so, until it is crispy.  Freeze in a single layer and bag.  Reheat at 350 for about 15-20 minutes wrapped in foil.

You have EXTRA okra??? bug-eyed  I am sooo jealous!  Our climate just doesn't seem to like it…tomatoes, basil, eggplant, melons, etc. yes….okra no.  Have to buy ours and it's pretty costly.  I'd be interested in giving the oven baked version a whirl though…

Ok, went to the Farmers Mkt here in town this evening, bought just a few pods of okra (cause it's from the valley and not local) and will wash, cut in half and put them in the dehydrator tonight with a VERY light sprinkling of salt and pepper.  Will report back tomorrow.

Wow that sounds good, a nice healthy snack, well healthier than fried anyway lol.  I'll have to check and see if I can even get it here, live in the NW and don't recall seeing it in the stores.

Here's my take.  I cut off the stem end and sliced it once lengthwise.  I didn't put in any pod that was more than 3 or 4 inches, sprinkled lightly with sea salt and fresh cracked black pepper (maybe a tad too much pepper).  On the bright side it has an intense okra taste (I love okraheart) it was in the dryer at 135 degrees for 9 hours.  They were not so dry as to be really crisp.  Good?  You bet, so I guess no dark side…

 

I will try again tonight, slicing on the bias to get thinner and see if I can get it to be more crispy.  devil-with-fire

 

KristiL, if I can get by the store I will try a small box of frozen sliced and see if that works too…everyone should have the joy of OKRA!!!

After they are dehydrated, could you spray them with a little oil and pop in the oven?

Thanks for all the good ideas!  Please let us know how the okra drying projects turn out.  Our okra hasn't started producing yet, but when it does…. look out!   fork 

It will be great if I can dehydrate lots of it.   Like I said in the first post, the ones we got fom the store were wonderful.  I could have eated the whole package.  They were very crispy and dried out, but not all shriveled up.  They were just seasoned with a little salt.

Nana, brought to work this morning and only had one NO…lol and he doesn't eat okra anyway, some Texan he is…lol  

I also want them more crisp so will slice as if to fry…and try, try, try again!!!

Oh my goodness!  I never thought about dehydrating the okra.  I will be doing this very shortly.  Since I am the only one that will eat okra at my house, there should be no risk of anyone else getting into the future stash of okra. 

I will also be baking some in the oven,  I have only eaten it fried and I truly love it.  Thanks everyone for the ideas.

Now,  to get my dehydrator off of the shelf.
