OfflineDoes anyone have a recipe for dehydrating okra to eat as a snack? I just had some from the local grocery, and they were wonderful! I'm thinking that you could slice them lenghthwise, maybe add a little salt or seasoning, and just put them in the dehydrator. Has anyone tried this? Seems like a good way to use up extra okra from the garden. Thanks!

OfflineHere's my take. I cut off the stem end and sliced it once lengthwise. I didn't put in any pod that was more than 3 or 4 inches, sprinkled lightly with sea salt and fresh cracked black pepper (maybe a tad too much pepper). On the bright side it has an intense okra taste (I love okra
) it was in the dryer at 135 degrees for 9 hours. They were not so dry as to be really crisp. Good? You bet, so I guess no dark side…
I will try again tonight, slicing on the bias to get thinner and see if I can get it to be more crispy. 
KristiL, if I can get by the store I will try a small box of frozen sliced and see if that works too…everyone should have the joy of OKRA!!!

OfflineThanks for all the good ideas! Please let us know how the okra drying projects turn out. Our okra hasn't started producing yet, but when it does…. look out!
It will be great if I can dehydrate lots of it. Like I said in the first post, the ones we got fom the store were wonderful. I could have eated the whole package. They were very crispy and dried out, but not all shriveled up. They were just seasoned with a little salt.

OfflineOh my goodness! I never thought about dehydrating the okra. I will be doing this very shortly. Since I am the only one that will eat okra at my house, there should be no risk of anyone else getting into the future stash of okra.
I will also be baking some in the oven, I have only eaten it fried and I truly love it. Thanks everyone for the ideas.
Now, to get my dehydrator off of the shelf.

I am sooo jealous! Our climate just doesn't seem to like it…tomatoes, basil, eggplant, melons, etc. yes….okra no. Have to buy ours and it's pretty costly. I'd be interested in giving the oven baked version a whirl though…
