Eggs--Can they be frozen in bags? How else do you preserve therm?

Our chickens are producing faster than we can keep up with them.  The crows have helped themselves to all they want, I guess.  Can they be frozen for fried eggs, or scrambled?  I imagine that they would be alright in baking situations.  Does anyone know?

Yes, I have frozen eggs with good results.

Break an egg…slightly mix the white with the yolk

Pour the egg into an individual square of a plastic ice cube tray…do this with each egg.

Place plastic over the tray and place in freezer until frozen solid

Remove from freezer and pop out the cubes…put into freezer bag and then use as needed.

I like doing it this way because one cube equals one egg.

I never noticed any difference in taste or performance…just like a "cackling fresh" eggchicken

I never scrambled them…just used them for baking. I don't see why you couldn't scramble.

I don't know how long they keep…I know I kept them for over 3 months.

 

Edit…you need a fairly deep ice cube tray. Some of them won't hold a full egg.

I also use an ice tray.  Last year I just cracked an egg over the tray.  I was able to have some nice fried eggs.  However, they didn't scramble well for baking.  This year I'm scrambling them and then pouring the mixture into the trays.  Doing it this way I'm only using 8-9 eggs per tray but I don't foresee it being a problem come baking time.  I'll just use an extra egg cube where I think it's needed.  Last year winter came a bit early.  I hadn't started freezing them in time so I ended up purchasing eggs.  Hopefully I won't have to do that this year.  I'd think that they'd keep up to a year, especially if they are in a freezer not constantly being opened.

I believe Suzanne did a post months ago about putting them through a strainer or colander to mix them slightly without adding any air before she froze them. I use slightly undercooked scrambled eggs to make breakfast pocket sandwiches or burritos.

I (sorta) have a farm in Africa.

I have been cooking up omelettes and then freezing them. I will have to try freezing the eggs in the ice trays ……
