OfflineI'm sure this is probably posted somewhere so forgive me for asking again if that's the case LOL. Anyways, my husband loves biscuits and eats about 2 of them every single morning, and we have been buying the "Mrs B's" frozen biscuits. Now that I know how to make bread, I need the biscuit recipe and then how to freeze them so he can just take them out and put them in the oven like the Mrs B's. Please let me know step by step because I am SLOW……how to do this! I appreciate all the help.

OfflineMrs Fuzz has a fantastic recipe over at Farm Bell. It is easy and makes a lot of biscuits which can be put in the freezer. The only time I made biscuits that could not be used for hockey pucks or clay pigeons was from her recipe!

OfflineI don't know Mrs. B, but I tried freezing my regular biscuit recipe, unbaked and it worked great. I just cut them out and layered them between pieces of plastic wrap before putting them in a ziploc bag in the freezer (on a cookie sheet until they froze, so they would lie flat). When it was time to bake them I put them in the oven frozen. I cooked them longer and at a lower temp than normal, and they were delicious. Baked at 350F for about 20 minutes, checked them and they were thawed, but not baked, so I turned the temp up to 425 till they browned, about another 10 minutes. If you are buying frozen biscuits, just follow their directions for baking your own frozen ones. I got the idea from this site:

I found her baking time was off, but her instructions were good otherwise. Using buttermilk instead of sweet milk makes a much flakier biscuit, also.

OfflineMy biscuits are pretty freaking awesome. You can freeze them in several different ways: You can mix the dough with everything but the buttermilk, and keep the homemade "bisquik" in the freezer. You can fully make the dough, cut out your biscuits, and freeze them like Mamajoseph. You can partially bake the biscuits (like about 10 minutes or so until they're just risen, but not fully cooked (I am pretty sure this is what Mama G & Pillsbury do); then bake them for 14-18 minutes at 350. You can also bake them fully, then double-bag them and freeze them! Get whatever you want out the night before, and you'll be gtg. If you want the "freshest" taste though, I recommend freezing the dough rounds like Mamajoseph. :) Still not a bad idea to double bag, though.

I would bake them as directed, but remove them from the oven just before they brown, and then freeze them. When you want to eat them, I would heat the oven per the temp in the recipe, and bake until golden.

OfflineOh this post makes me want to cry !!! I miss you guys !!
so funny.
I made scones once and the not yet husband put them by the front door and called them door stoppers !!! I did not mind. Who used fresh butter and buttermilk, in the 70's, when they were 20 years old ??? ugh…margarine was the norm back then. and the flour was probably 2 years old…
My sons have also called some biscuits I USED to make hockey pucks. BUT, I do have to say…Mrs. Fuzzs recipe before I even knew she was a loveable , not at all tough, Creampuff of a girl is lovely !!! But now the boys think I should get up at dawn and make them every morning…

Definitely going to be freezing biscuits. That was another thing I used to get out of the yellow truck….they were so easy to pull out of the freezer. Buy, hey, if they're homemade to begin with! Thanks for the ideas, ladies

OfflineMrsFuzz, I'm going to try your recipe, too. The problem right now is…no freezer space, no flour and no one for whom to cook really!!! Seems every time I cook food, it goes to waste and gets pitched. Camping season is over for us.
The hockey pucks I made truly ended up as hockey pucks for the kids. I used to freeze some water in a cup and the kids would play hockey with it on the old formica table. When I made homemade "hockey pucks" they just used those. It was less mess and they had fun. I think even more fun was when their contests became how far off the table did their biscuits go?
Hey, that's how you entertain little ones when you're a single mom! LOL That and rollerskating and riding scooters from the kitchen to the front door and jumping ramps in the basement, or plastic butter lid frisbie fights. Had to draw the line on the baby mattress toboggan down the steps (their idea NOT mine. I was trying to cook dinner!) It worked for a while until all three plus stuffed animals rode it – the one in front hit the wall at the bottom (I think it had something to do with physics.) Sorry, got off subject.
I'll make biscuits soon!

Dangit, Laur! Don't go telling everybody that. You'll ruin my reputation! *stomps around grumpily looking VERY tough* ![]()
But seriously…I've tried every way I can think of to ruin that recipe, and I haven't managed it yet. At the very worst, the biscuits may not rise *as* high. I never met someone who complained that 1 1/2" biscuits weren't good enough, that 2" must be attained! :)
