I'm pretty sure you can freeze any cheese, BUT it changes the texture / consistancy of most cheeses.

Sure you can. We freeze our mozz whenever we have an abundance. It works best when shredded first.

I freeze the shredded stuff all the time.  Every Friday night is homemade pizza night at our house, so we go through a ton of it and I buy it in bulk.

I freeze the shredded all the time too.  I also buy block & slice it & freeze it.  The freezing doesn't seem to change the texture of Mozzarella…at least not that I have noticed like I do with other cheeses.

If I learned something today, the day wasn't a waste!

I freeze it all the time without shredding it first. I just wrap it well and put it in a freeze ziplock bag with as much air pressed out as possible.  I haven't noticed any problem with the texture – but then I cook with mozzarella and don't just eat it as is.

They sell frozen pizza w/mozzarella cheese on them. The cheese doesn't seem to suffer too badly.
