I cooked a brisket yesterday.  After I cook it, I always put the gravy/juice in a bowl and put it in the refrigerator so the grease can solidify and I can dispose of it.  So then we are left with a bowl of cold jiggly brisket jelly.  My husband joked that we should put it in a jar and label it as something yummy like apple jelly and give it to someone as a gift.  Hahaha

Actually, that's similar to the first step in making calves foot jelly, which used to be thought of as a primo restorative food for someone who had been sick.  When someone was sick, friends would bring them calves foot jelly.  It was an aspic like yours, made by cooling and degreasing stock from boiling calves' feet (or pigs' or sheep's could be used).  Then it was boiled and seasoned with spices and sweet wine, and filtered through a jelly bag until it was completely clear.

 

I would be happy to receive a jar of your brisket jelly; it makes great gravy.  But if you labeled it apple jelly, I would be sure something had gone terribly wrong. sun2

I was sure this was going to be the "cut off the ends of the roast" joke! 

Source: various email forwards over the years.  This particular rendition has been copied from here.

One day a little girl was watching her mom make a roast beef. She cut off the ends, wrapped it in string, seasoned it and set it in the roasting pan.

The little girl asked her mom why she cut off the ends of the roast. Mom replied, after some thought, that it was the way that her mother had done it.

That night grandma came to dinner and the little girl and her mom went to her and asked why she had cut the end off of the roast before cooking. After some thought grandma replied, that was the way her mother had done it.

Now great grandmother was quite old and in a nursing home. But the little girl went with her mom and grandma to see her and again asked the question.

Grandma looked at them a bit annoyed and said, "So it would fit in the pan, of course."

LOL! Very Funny!!!!

I actually hadn't heard that before!!

 

Oh, and I think the aspic or brisket jelly sounds great as well….I always save that for GRAVY!!!! Never thought about canning it…..but, I might now!
