OfflineTwo summers ago I had a humongous crop of beautiful Italian (paste) tomatoes that just wouldn't stop producing. After making tons of plain sauce, tomato juice, pasta sauce, ketchup, double red tomato soup (tomato and roasted red sweet peppers) and salsa, I decided to make chili sauce using two different recipes, not thinking that all I have ever used the Heinz version for is meatballs.
Because my experience with cooked tomato recipes like these taste fresher frozen rather than canned, I filled my freezer up with all these tomato products. I cleaned my freezer out yesterday and realized that I still have most of those jars of chili sauce taking up my best 12 oz. jelly jars and too much freezer space.
It would be a waste to throw it out, but at the price of meat, it would be a bigger waste to make up something that just didn't taste good in the end. I searched the Internet but came up with little besides meatballs and using it as a condiment or to make cocktail sauce.
I would be eternally grateful for any tried & true recipes or suggestions out there to use it up.

OfflineIt is good. It is 8 oz cream cheese, 1 10.5 oz can of no bean chili (an larger size overwhelms the dip) and shredded cheddar cheese. Corn chips such as scoops work the best for dipping. I don't know why subsitutions couldn't be made.
In fact in my family it is known as Alyson's (youngest granddaughter) favorite dip. When she was about 2 years old I had made it and served it on the coffee table. Later, as we went about our activites we realized that Alyson was very quiet which was/is unusual for her and we knew she was up to something. Well, we found her under the coffee table happily dipping her fingers into the leftover dip. She had consumed quite a bit of it.

This is chili sauce I am talking about. Like the Heinz Chili Sauce, that you use with grape jelly to make party meatballs. Like a spiced up sweet/tangy ketchup or cocktail sauce without the horseradish. I realized that Ross was thinking about chili like with hamburger and beans after I thought about melting cheese on top. I did put some chili sauce on warm cream cheese and scooped it up with tortilla chips, but it was only fair.
I am making roast pork for dinner, so I am thinking about mixing in some apricot jam to make a sweet & sour sauce. I've got 10 jars of this stuff to use up. I tasted it and it is really good, just not too many uses for it in cooking.
One of my favorite recipes with chili sauce is…..A block of cream cheese, a small can of shrimp or crab meat (drained) and top it off with chile sauce. Sometimes I let the cream cheese soften and mix it together…It is great with Triscuits. (this is my son's favorite dip).
i really don't have a measurement on how much chili sauce to use….I start with about 1/2 bottle for a block of cream cheese.
If you want it a little milder….use one can of shrimp, 2 blocks of cheese and 1/2 or more bottle chile sauce.

OfflineWe like chili flavored pinto beans as a side dish…like Ranch Style beans. Seems like it would be good for that. Or add the chili sauce and maybe some more chopped tomatoes/onions to a pot and have a bowl of really tasty beans with rice or cornbread. My other suggestion would be to pour it over any meat and cook in the slow cooker. I think it would be heavenly! But I'm from Texas so chili sauced anything works for me. We make a dip made with canned chili and velveeta cheese. It's yummy with Fritos.

OfflineI posted a recipe in Farm Bell some time back for Creole Onions and Rice that uses some chili sauce.
And, similar to what Dana mentioned, a really good appetizer is cream cheese with crab or shrimp mixed in, formed in a ring, then chill and pour the chili sauce over the ring right before serving.
Very good also mixed in and brushed on top of meatloaf.

OfflineI finally decided on a couple of recipes and cooked them up today while we were having dreary, rainy, cold weather. I found a recipe for Barbecue Baked Beans that did not start with pork & beans, and with a few changes and additions, they turned out to be pretty good. That used up one 12 ounce jar, but could have used more. I might open another jar tomorrow and add to them make the beans a little more "saucy" as they were a little dry.
I also made meatloaf my regular way, but just used chili sauce in place of ketchup. Near the end I basted the top with about half a jar of chili sauce. That turned out okay, but it was a bit too tangy for my tastes. I like my regular meatloaf much better, so I won't use any more chili sauce for meatloaf.
I've learned my lesson. I don't use enough chili sauce to justify making homemade. The few times I make party meatballs I will just buy a jar of Heinz at the grocery store.
