I found this Pectin from Scratch online.  It's just cooking and straining apples……hmmm!!  I've got apples, I'm going to try this!  Hopefully tomorrow……then I'll have to make a batch of Caramel Apple Jam!

The Ball Blue Book also details the process for making pectin. My experience has been to make a kettle full of green apples or crabapples and cook them strain the juice and use that juice to cook a second batch. That way your finished pectin is quite thick. Wild apples work fine and are usually free of insecticides.
