Homemade Vanilla Extract

I'm about to use Suzanne's recipe for homemade vanilla extract.  I'll be using 8 oz bottles instead of 2 oz bottles in the recipe. 

 

Should I use 4 vanilla beans since I'm quadrupling the recipe? 

 

Thanks for any advice!

I would too.  I usually put anywhere from 8 to 12 beans per cup…The 3 bean was just a little too weak for me.  So, after playing around with different batchs, I found 10 beans worked perfectly.  This time around, I had extra beans, so 13 beans went into the mix.  Smells absolutely devine!  Cannot wait to try it.  It has been brewing for over 3 months, and I am letting this batch hit the 8 month mark before using it.

I like to double the beans for double-strength vanilla! LOL!  There's no such thing as too much vanilla!

Oh I'm so excited about this.  I started two huge batchs to give give away as christmas presents to my cooking group.  One is a Sam's club size bottle and I put 36  beans in it and the other is a typical size which I put 18 in.  I agree with Suzanne, you can never have too much vanilla.

 

I'm so excited to get to bake soething with it…. next year.

odear,  this is making me cry.  I love vanilla !  

  where IS this wonderful recipe !? 

  and where do you get those vanilla beans !   ? 

   

  i remember we got a vanilla bean tied to a christmas present back in the late 60's…mother earth friend of my parents…anyway,  I garnered that bean and hung it in my closet for the delicious smell…

  omygosh…my mother was not too happy with the super loooong trail of ants it provoked !   bye bye bean…hello to  frantic super cleaning and nasty smelling fumigants…

  everything natural was kind of an enemy in the suburbs back then  …

Laur,

This is super easy.  Buy a big bottle of vodka.  Cut a bunch of vanilla beans longways, leaving one end uncut (so it opens like a big "v") and put them in the vodka.  Let it sit, shaking every other day or so, for AT LEAST 8 weeks.  3-6 months is even better.

When it's to the strength you like it, strain the extract through a coffee filter and it's ready to use.

Whenever I make vanilla ice cream or anything that I used a vanilla bean for, I just drop the scraped out leftover vanilla bean into my vodka turned vanilla extract bottle…I keep adding to it…and when it starts to get low, i just add more vodka…my bottle was started about 18 mos ago, it's getting darker and darker…it's so good…it's aged vanilla extract!

I bought vanilla beans from Arizona Vanilla, and it was incredibly cheap.  So much so, that I was worried at first.  But they arrived safe and sound, and the beans are still pliable and strong.

Don't really think that it's required that it be strained, but perhaps those who sell it do so because their customers think it's prettier that way.  I'm pondering whether to strain or not for gift giving this year.  Hmmm.

Decades ago, I bought vanilla in Mexico because it was so much better.  It had vanilla sediment in it and I only needed about half what a recipe called for.  By the time I used a quart bottle, even less than half was needed!

OK, so after talking about it however many years it's been, I finally ordered the vanilla beans!  Guess it's time to find some vodka and pretty bottles…    wave

Has anyone ordered small bottles for gift giving?  I have found a few websites but they are expensive.   I have been watching garage sales for little liquor bottles and soaking off the labels.  But some still have strong odors of the liquor.  I have 2 quart jars of vanilla ready for christmas presents.

   I guess i will have to soak off the label on the bottle of vodka  …just to be on the safe side with 13, 16, 17, 19,  boyz here…oh those boyz…

    but i am going to do this thing. !  so excited to even be ordering the vanilla beans !warrior

   thanks for all the encouragement,  peeps. 

   and yep,  garage sales are great for little bottles and jars for bath salts and …lip balm etc.

  I used to go for end tables and such…now I scavenge the land

  there is now an eternal bucket of  delabelling  going on around here.  I love when people look in there and try to figure out what concoction I am coming up with …

 Big Daddy  Ex is coming tomorrow !!!
