OfflineHi Miss Nellie. I use my Vita-Mix to make p-butter, but prior to that I used the KA blender which worked well. I add just a tiny bit of salt and some honey. If it is too stiff a little peanut oil may be added. I use dry roasted peanuts – like that roasted flavor. Good luck with your peanut butter.

OfflineI use the food processor. I don't add any oil, I just like it thick and creamy. To make crunchy, I chop nuts separately and fold together.
I do like the idea of adding honey, though, will have to try that!

OfflineThanks everyone, I like the idea of maybe adding honey I think my "honey" would like that. Chopping nuts some to add at the end sound like a great idea also. I had not thought of crunchy peanut butter. I think I will try the food processor the first time. I made peanut butter years ago and used a blender but I haven't tried it recently. The nuts will be roasted too. It is raining today so this sounds like a good project to start with – well after I feed all the animals etc.

OfflineOkay, always my question about anything is where do I get it cheap. I live in NY, nothing comes cheap here, (except apparently land and housing, which we are finding out now that we are considering a move to another state, ironic, huh?) , so where would I find peanuts, particularly raw peanuts in NY. And what would one consider a small batch? What is the yield from a cup or so of peanuts? We used to buy raw fresh ground peanut butter from one of the first health food stores in the area when I was a kid but the store was about 40 miles from home. The store worker put a cup or two of peanuts in the grinder and handed you a small plastic tub of the best peanut butter, ever. I miss that health food store. This was before all "fresh" health food came bottled and canned with little green labels.

OfflineI buy my peanuts from a farmers co-op, I have also found them in grocery stores in the produce section, but best of all farmer close by grow peanuts so in season I can buy from them. When I buy from farmers, I have been able to store shellled dry peanuts in vacuum sealed bags on the pantry shelf for 1 year and they are just as good as when first stored.
I made my peanut butter this morning and DH thinks it is too dry (he has swallowing issues), I added 2 teaspoons of oil to 2 cups peanuts. How much do you need to add for smooth spreading PB? BTW 2 cups of peanuts yields 2 cups PB in my experience.
