How do you use your Thansgiving leftovers?

happy-flowerI love all the cooking that goes with preparing the Thanksgiving meal and I especially love the fact that we have fridge of wondeful leftovers, I am curious how you use your leftover– would you share your family's favorite leftover dishes?

Turkey sandwiches come first … the family gets 'em quick before I close in on the turkey wrap-up of rice casserole or noodle soup (the carcass and carmelized drippings are in the pot as I type).

DD's favorite: bread thickly schmeared with sweet potato casserole, turkey, and her new favorite since last year, cranberry pear chutney.

DH's favorite: open-faced sandwich of bread, sausage stuffing, dollops of sweet potato and corn casseroles, turkey and a drowning of leftover gravy.  He would drink turkey gravy if I let him.  Guess I should mention he makes this in a shallow pasta bowl for obvious reasons and most of us try not to watch while he's snarking it down with a soup spoon.  The definition of sandwich might be iffy here.  Pretty sure he prefers Thanksgiving the-day-after over the company event.

My favorite: turkey on sourdough with spicy mustard + lots of homemade pepper onion sweet relish … although this year's cranberry pear chutney is a big rival for the pepper relish.  May have something to do with using hard cider as the liquid in the chutney as that certainly added an interesting background after mellowing for a week.  The two pints of chutney is going fast … DD was piling it on leftover pumpkin scones this morning.  Oddly, she didn't think it was funny when I remarked she's doing a remarkable imitation of her dad's post-Thanksgiving wallow.  I think they're both adorable.

We always have Thanksgiving dinner again on Friday, dh's request.  I also always put the carcass of the turkey alchefong with any remaining skin, drippings etc. in my crock pot the same night, add a bit of onion, carrot and celery and let it cook on low for at least 10 hours.  I strain it and add turkey, veggies and noodles for soup on the Saturday after.

For turkey, I make turkey pot pie or turkey curry (yum!) or turkey croquettes.  I always roast a 20 pounder for just four of us 'cause the guys go hunting and want turkey sandwiches, too.  You can also make a "sheppard's pie" with leftover potatoes but use turkey and gravey and leftover veggies instead of the ground meat.  And there is always the basic turkey hash.chef

After Christmas last year, I had a ton of homemade cranberry sauce left over, so I modified my usual scone recipe to use it up and they were probably my best scones ever.  Combine 2 c. flour, 1 T. baking powder, 1/4 c. sugar, and 1/2 t. salt; cut in 1/4 c. cold butter or margarine.  Whisk together 1 egg, 1 1/4 c. cranberry sauce, 1/2 c. white chocolate chips, 1/2 c. dried cranberries, and 1 t. vanilla.  Mix into flour mixture just until combined.  Pat dough into a circle (about 1" thick) on a greased baking sheet and cut into wedges.  Bake 25 minutes at 400 degrees, then cut apart.

I have a recipe for a casserole I'll have to look for….

 

Found it!

Turkey 'N Stuffing bake

1/2 C butter

1 1/4 C boiling water

3 1/2 C seasoned bread crumbs (Peppridge Farm)***

1 can FF onion rings (or less if desired)

1 can crm. of celery soup

3/4 C milk

1 1/2 C cubed turkey

1 pkg. (10 oz.) frz. peas, thawed

 

Combine butter & water, stir until butter melts…pour over bread crumbs, toss lightly.  Stir in 1/2 can of FF onions.  Spoon (dump) mixture into a 9" sq. baking dish (1 1/2qt.).  Press along sides & bottom to form a shell.

Combine soup, milk, turkey & peas, pour into stuffing shell.  Bake covered at 350º for 30 min.  Top w/remaining FF onions & bake uncovered for 5 min. longer.

 

***3 C of leftover stuffing can be substituted for the butter, water & bread crumbs.  Make sure it is moist, if not, add a bit of water little at a time until you can make your shell.

 

My son used to prefer this to the Thanksgiving dinner!  ((roll eyes))

I LOVE the leftovers. My favorite is a hot turkey sandwich with dressing smothered in gravy. The rest of my crew, hands-down, no question, it's Turkey S**T. Has already been asked about this evening. Here's the link to the story and the recipe over in Farm Bell.

I heard a new tradition some friends have started called "morning day". Everyone shows up at the host's home in their pajamas with their leftovers in tow. Everyone eats and enjoys lounging around. They hold it on the Sunday after Thanksgiving.

I (sorta) have a farm in Africa.

My bunch likes turkey stew with dumplings or biscuits…fixed some tonight. Just take turkey carcass broth add a bag of frozen mixed veggies  plus a couple of diced potatoes. When the veggies are tender add cubed leftover turkey and a cup of milk or cream…bring to a boil thicken with clear gel. Spoon over biscuits. Very simple. I have also thrown in left over stuffing.

My daughter makes wonderful turkey enchilladas…we also like turkey salad sandwiches.

Almost forgot – Turkey Gumbo soup! Stock from the carcass, onions, bell pepper, stewed tomatoes, okra, rice, few bay leaves. Really good.

Making soup today, and I think I'll try my hand at a 'white' pizza.  Garlic cream sauce with turkey and though it's not normal on most white pizzas, I'm going for a light sprinkle of cheese.  …I have some canned artichokes too, are those close enough to 'white' do you think?

We eat leftover turkey and turkey sandwiches until we can't stand them anymore!  Then any remaining turkey gets frozen to use in future casseroles, etc.  I use leftover mashed potatoes to make potato soup.

Turkey sandwiches, turkey tetrazzini and the carcas turned into soup with homemade noodles.

Turkey salad and lots of turkey noodle soup (made with carrots, celery, herbs, and the stock I canned when we processed our broilers this spring).  Tasty!

We promptly got the flu at our house after Thanksgiving dinner this year (ugh!), so we are all having difficulty eating the leftovers in their original form–just too many bad associations, unfortunately!  I think that some of the things we can't reincarnate as other (unrecognizable) meals may have to be "turned into eggs" (fed to the chickens).  That way, nothing is a total waste!

My soup turned out fantastic if I do say so myself!  I simmered the carcass for quite a long time, removed it and all the old veggies because they were totally cooked all to heck, added some good veggies simmered till they were tender, then added some cut up turkey meat and also some barley. 

It was yummy, BUT!!!  I always forget just how much barley expands.  There was way WAY too much in there so I had to add some extra broth I had as well as more meat to change the proportions.

It did remind me though how much I liked barley though!!!  Just don't EVER forget to go light with it because it expands like CRAZY!!!!!!

I agree that I'd like to hear about Pete's chili recipe too.  Always love to hear about good recipes on Farm Bell!!!

BuckEyeGirl, would you be willing to post your garlic cream sauce recipe?  I love, love, love white pizza and haven't been able to come up with a cream sauce for it that I really like.  Your white pizza reminded me of Papa Murphy's Gourmet Vegetarian Pizza:  garlic cream sauce, tomatoes, onion, spinach, and artichoke hearts.  So delicious that I don't buy it any more because it totally destroys my self-control.

Made these sweet potato biscuits today and they are a winner!

My (leftover) sweet potatoes had been baked with a little brown sugar and butter and did not need the honey butter. I also added about 1/4 tsp. cinnamon. Delicious! I will definitely make them again. I patted them out gently and cut them into squares with my bench scraper. The dough is rather wet and fragile…worth it.
