growing up we all shared the same "oleo" (shudders to the oleo) in wrapper. These days I have pieces of parchment for everyone… with butter dish & S & P on the table.  MMMM. Can hardly wait for corn season here!  I (usually / try to) skip the added salt, but love the slather of the salted butter and fresh ground pepper eating

I remember we used to put the bit of water on to boil, then go out to the house garden to pick the corn, shuck it, and steam it.  If it had been picked earlier, we added some sugar to the water.  I still add sugar to my steaming water when I can't get corn cooking that fast!  (so far, Never)

Although I buy local as often as possible, corn sugars/starches change far too quickly …if you know the difference!

Even so, corn on the cob is almost, always delicious…even a few hours after being picked!

@dede – DOH! (slaps head) Put the corn holders in before you put the corn in the water!  Why didn't I ever think of that?  All these years I've been burning my paws putting the holders into the hot ears.  Such a simple solution and it never occurred to me.

This old dog just learned a new trick.

 

Buttered corn is yummy, but my favorite is lime juice squeezed over it, and sprinkled with chili powder (especially good on grilled corn). That's how they did it in Mexico when I was a kid.  But no matter what you put on it, the best thing is if you can get fresh picked. We literally used to put the water on to boil before we picked it. 

 

My dad used to say that the proper way to cook corn was to build a campfire out in the cornfield, put a big pot of water to boil over the fire, and then just bend the cornstalk over to dip the corn in the water. LOL. My dad occasionally told a tall tale.

Whaledancer, What do you use for chili powder? Is there a special brand? My son's girlfriend comes from California, and just raved about the corn trucks there that served corn on the cob like this. She said this was what they had as after school snacks the way my kids stop and get fries at a fast food place. We'd love to try it. Got to ask her about the lime on it. It sounds awesome.
