I try a new brand of flour

A new Wegmans grocery store has opened near by and since I was out of flour and in that neighborhood I bought 3 five pound bags to try. At one dollar per bag i didn't feel that i could go too wrong.

I have a standard bread recipe that I have made perhaps a hundred times so I know what to expect. I have used Pillsbury, Gold metal, and house brands from all of the local super markets. Usually i buy unbleached all purpose but I have used the name brands of bread flour.

Back to the Wegmans unbleached all purpose flour. I make the batch 3 pounds of white flour 1 pound of whole wheat two teaspoons of yeast two tablespoons of salt and 42 ounces of tap water.

I am entirely pleased with this and suggest that if you have them near you please try this flour.

Thanks for the advice about this new store I don't believe we have any around here yet. But I want to try Trader Joe's because I have heard great things about it. Your bread looks great whole wheat is my favorite.shimmy

I did add some lard to this recipe. That may account for some of the extraordinary rise but I haven't noticed it before.  I think that the primary change is the flour. When I make another batch we shall see. Generally I have had good results with house brand unbleached white flour.
