It was SUPERB!!!
The bird in question was a Honeysuckle White. It weighed about 13 lbs. I thawed it in brine in a cooler, thank you again, Pete, for your briliant brainwave. I took it out, rinsed it well, patted it dry, buttered it, shoved some celery and onion up it's wazoo, then thrust it in the oven according to directions.
It came out brown, fragrant, meat falling off the bones, and amazingly tasty. We ate like starving wolverines and had plenty leftover for sammiches today and Turkey Divan tomorrow.

Everyone brought food to Mom's. We had an overabundance of good dishes made from scratch. Two turkeys,one baked,and one smoked.Dressing, mashed potatoes, potato cubes scalloped, a brussel sprout casserole,my broccoli casserole,sweet potato casserole, a jello 7up salad and,iced tea. There were tortilla chips and a hot cheese with shredded chicken dip and a taco dip for them. A dumpcake,my cheesecake and,pumpkin pie and pecan pie for dessert. My Sil made some cocktail concoction with peach schnaps and wine with orange,lemon and lime slices stirred with a cinnamon stick,but I was too full and wanted coffee by then!
I got a lot of cute pictures of my little niece with her new black minature poodle puppy,Belle. And of her and my little curly haired grandbaby playing. We adults tried the new game Cranium. There was so much going on Mom said I need to come back so we can sit and talk some! I told her it will be easier to do that with my new wk schedule now. Seems the time went sooo fast! Well, C'mas is just around the corner!

It might be a British thing,leftover turkey is commonly used up by making a Curry and serving with Basmati Rice,Poppadums and Mango Chutney.
Taking Roast Turkey on Xmas Day. Cold Turkey,Ham ,Mashed Potatoes and Pickles on Boxing Day.There is not a lot left over,but a Curry nicely finishes it off.Im looking forward to mine.Plus one of those "Dreadful Xmas Puddings" and Mince Pies

One of my favorite things to do with leftover turkey is to make turkey hash. No big deal. You just chop up some turkey meat into chopped potatoes and onions which have fried for a bit. Season with Worcestershire sauce, salt and pepper. If you want to get fancy, add a fried egg and/or some cheese.
