I just received a 50 lb bag of potatoes…and I dont know what to do with it. I know we wont eat all of them before they go bad! Are they Cannable? (lol that sounds so funny) or dryable etc? New to being frugal and self sufficeint! Go me Go me… LOL

PS I was wondering why you were so ried that your potatoes would eat one another, then continued reading and cracked up at myself! Personally, I find canned potatoes to be totally icky.

Yes I know it sounded funny! LOL I want to be able to freeze them I think…. I have a big freezer in our laundry for extra food and I was hoping that I could freeze them and they would be okay…I have tried canned potatoes and I agree to the fact that they are not very good at all. I prefer potatoe flakes etc if I have to. Oh well maybe I will throw a big baked potatoe neighbor hood potluck! HA HA HA.

For freezing potatoes, there is a Yahoo group called Friendly Freezer that has a ton of TNT recipes – the one that I remember that was said to be superior was a mashed potatoe recipe with cream cheese. And twice baked potatoes also. Canned potatoes are very good – depends on what you expect I suppose LOL. Many on Canning2 can them and then drain and fry them with great results. I like to drain well and roast unti they get golden brown. Dehydrating is really the best option if you have a dehydrator. Blanching is usually recommended but I have a good friend/co-owner on C2 that swears by baking, then chilling, then slicing thin and drying.

I always can my small potatoes after we dig them. Put them in the jars , unpeeled, and pressure can. I drain them, and fry them in bacon grease. We like them.

I think that potatoes canned in glass taste good. If you have ever had them out of a can, they can have a very strange taste. Preparation is the key to anything.
Store potatoes in a cool, dry, dark place. I cover mine…and when I have a surplus, store them on an elevated screen…allowing the air to circulate. (I do this with onions too.)

Definitely better canned in glass. I just posted a recipe that works well for canned potatoes – the best for using commercially canned I have found so far.
