Where else could I go but here with this question?hug I purchased a large bag of broccoli at Sams and instead of checking out directions on freezing (I was busy)  I put half of them in a in a freezer bag and into the freezer it went.   Are there safety issues with not blanching first?

Nope.  No safety issues at all.  You'll probably see some loss of color when you cook them, and because what blanching does is stop the enzymes from continuing to act on the veggies, there may be some loss of nutritional value, but it's not going to hurt you or your family.

I'd try to it up pretty quick is all.

Blanching distroys the enzymes that cause food to break down. If you use it fairly soon it will be fine.

Was it fresh or previously frozen?  If it was frozen then you should be fine.  Fresh, I am not sure about.  I always blanched it before freezing it.

There is a wonderful Hors D'orve made with broccolli, cheese and egg and baked in a pan or pyrex dish and cut into squares. That freezes well. Perhaps someone has the recipe.
