OfflineSo I started out today at 10 a.m. making Open crumb Grandmother Bread. This morning it was hot, hot, hot but I let the bread rise a really long time so it would be nice and fluffy. In the mean time, it cooled down, the weather, I mean. So when it was time to do the second rising with the additional flour, things had slowed down a bit. Then by the time it was loaf-shaping time, a cold breeze was blowing right through the open kitchen window. The up-shot is, the bread just got done and we are having BLT's on Grandmother bread at 9 o'clock at night.
Thank goodness the bread turned out really, really well, so my family is quite forgiving for the late hour. I should have done the hot water in the oven thing, but was sorting cook books and semi-kitchen cleaning and didn't want to take the time.

OfflineRoss, Duh! (slaps self in head) I never thought of just putting a bigger fluffier towel over it. I had one of my little restaurant type cotton towels over it. That I always do and it would have been fine if the weather hadn't changed. I should have done it any way, when the water was was warm, but then so was the weather, so everything seemed fine. Until about five o'clock in the evening, that is.
Oh well, the weather is beautifully cool today and I'm starting over with English Muffin bread. I'll take your advice now.
