My brother's trick to a great apple pie with a flaky crust……………assemble pie as you normally would……..put in microwave until it's all bubbly (maybe 10 min?), then put in hot oven to brown up the crust……………very amazing pie, and done with this crust recipe? it melts in your mouth!

Thanks everyone. I tasted the crust …I knocked a small piece off…oopsie and it's delish. I made it with butter cause my lard was frozen…I just use it for tamales so I didn't want to wait for it to thaw…
That's interesting about the 10 minutes in the microwave…might have to just try that…

I can't remember where I read it, but I saw a recipe that uses vodka as part of the liquid in pie crust, so I tried it. I use all butter because I can't find organic lard, and instead of all water for the liquid, I use half water and half vodka. The reason for the vodka is that vodka is wet, like water, but it doesn't cause gluten to develope, so the crust is very tender when baked. All the alcohol scent bakes away and isn't detectable in the finished pie crust.

I can't claim credit for the idea, but I can't remember where I read it, either. But it makes a pie dough that is a joy to work with and that doens't crack (split at the edges) when you roll it out. I suppose you could substitute other forms of alcohol that would leave a trace of their presense to compliment the pie fillings…like brandy, or schnapps or some of the flavored vodkas there are now.
p.s. Does anyone besides me just love the smell of unbaked pie dough?

Now Ive heard of a few things in my time,but alcohol in pastry is a new one,one I must try without fail.
It could explain that contented smile you see on the faces of ladies when they come out of the kitchen

I like the apple with the stem she cut into the top pie crust,so cute! My Nana and my Mom used to cut a wheat design in theirs to decorate/let steam out. They said they got that from my Greatgrandmother.

I have the vodka recipe, I'll dig it out and post it. OK I will post a link to the recipe, since it is probably has a copyright…
My Mother always used a can for cutting biscuits and cookies. She just removed the top and bottom lid and it became a cookie or biscuit cutter. She had several sizes, like a tuna can, a tomato paste can and a tomato sauce can…so the apple was cut using the tomato paste can…You can't really see the stem or leaves but I cut them also..just pressed one side of the can into the dough and then the opposite side right next to it for the leaves and one for the stem …makes a nice decoration. I do it after it's rolled out and before I put the dough on.

Great looking pie! I half cook a fruit filling for pie too. That way I don't have to almost burn the crust to get the fruit cooked in the filling. Even just heating it to a boil first helps. We are still eating the 2 apple and 2 pumpkin pies I made last week.
I froze one of the pumpkin pies.
When those are gone, I'm making Suzanne's pecan pie with bacon added.
