Hi all,

     We have a granny smith apple tree and this year it is LOADED with Very Sour Apples!! any ideas on how to use them?  right now I am making apple sauce and will probably add lots of sugar!  I just don't want the apples to go to waste.  Thankswave

My husband loves apple pie made with tart apples. I would just can them as pie filling. Come January they will be wonderful as pie, ice cream topping or as an Apple Betty. Lucky you!

P. S., and this is just my opinion, others may feel differently, but I don't think I would like tart apples for applesauce. I plan on using Yellow and Red Delicious, no sugar needed.

     Lastly, my sister-in-law is making apple butter and apple-pumpkin butter. I have'nt tried it yet but it sounds wonderful.

Maybe you could have an apple swap party. Someone around you might have sweeter apples and be glad to trade some. I've heard that it takes a mix of at least three kinds of apples, at least one tart, to make a good apple pie.

And yeah, what apriljoi said about the applesauce but probably more because I am too cheap to add too much sugar to my apple sauce.

Izzie, They are probably not yet ripe. But they will make fine pectin by the Blue Book method. Just give them a couple of more weeks on the tree for the sugar to develop. It is still only mid September.

YUM!!!  How far is Grass Valley from Augusta County, VA????  I'd buy a bushel from you!!!  They don't make an apple (or any other fruit) too sour for me. 

 

Granny Smith apples are late to ripen, so leaving them on the tree until October and storing them for a month before using will make the apple more palatable.  They are a long storage apple, so you don't have to rush to can them.  Most of the late apples' taste and texture are improved by storing for a while before eating.

Okay, so I thought they were ripe because some have dropped from the tree! yes I know an apple farmer I am not.  This would explain their tartness, oh well I have a crockpot full of apple sauce made with the tart ones and a few gala apples thrown in.  I will wait for the rest to ripen and then go for it.   Most of the apples are small and wormy, I spent quite a while last night washing and cutting to make sure we had NO worms in the apple sauce, oh yes and a very large earwig decided to perch on my shoulder during this, I was jumping and tearing off my shirt in the kitchen, of course the Hubby got a good laugh out of that.  I would take a snake or a spider over an earwig any day.  They are just so ugly and mean looking!  I got him though, the garbage disposal is a great thing!yes

Picking half of the apples on that tree will cause the remaining apples to grow larger and sweeter. The apples that you pick during the thinning can and should be used to make pectin.
