Ya know what…..If we all lived within spittin distance of where this wedding was held, don't you just know we could all swoop down like a cluck of mama hens and outfit that reception in no time flat!  How wonderful would that be?  Smile

I'm going to be pulling together an outdoor wedding on May 15th here in Georgia. 

Make sure you give us a good head's up so we can start praying for beautiful unusually warm weather…and no rain.

Also, check out the Mock Rumaki recipe I posted in Just Recipes – easy to make ahead and bake last minute since there is no meat involved except bacon. And they are a huge hit every time I serve them (I have done some catering).

Your daughter sounds a lot like me in that she doesn't want a lot of fuss, but wants something people will remember. I can relate. That's exactly what I wanted at my reception.

You want something that everyone leaves satisfied with. Maybe think something more along the line of tapas and appetizers instead of a complete meal. Keep the portions small, that way everyone gets a taste (or two!).

I like the idea of the chocolate fountain, and then you could get things like marshmellows, preztels, and cheese. (Fruit is yummy, but it gets pricey, when you need to buy a lot of it.)

For your idea of a shrimp and grits station, maybe consider serving them in a double or triple shot glass, rather than a martini glass.  

Here are some of my ideas for things to serve:

Soup! Since you said it would be chilly, but maybe not freezing.  think about serving little bowls of soup. Maybe you could have two or three different types.

Along the same lines as your shrimp and grits, what if you served chicken & dumplings in the same fashion?

Hummus – A simple bean dip that's easy to make and gives you tons of options to dress it up.

Caprese Kabobs — Simple and easily tailored to your tastes ( Here is just one idea: http://www.recipezaar.com/Fres…..bs-259427)

Someone mentioned chicken salad I think, and I like that. At my reception, they had these bite-sized pastries (almost like creme puffs without the creme) and they piped them full of the chicken salad mixture. It was a simple little spin on children salad, verses putting it on plain bread.

You're all coming up with such great ideas! I think we're definitely going to do chicken salad because it's quick, easy, and cheap! I kind of like the ham biscuit idea because we're thinking of a kind of
Southern theme and they would go well with that. The individual spoons with tomatoes…how cute is that? Great idea about the marshmallows and pretzels for the chocolate fountain instead of just a pile of fruit. I'm intrigued by the chicken and dumpling idea and wonder how I could make that work. Maybe like you suggested and model it after the shrimp and grits with individual glasses. You guys have given me lots of ideas to think about.

I'm about to head over to Just Recipes to check out the Mock Rumaki recipe and also check out the sites Kelleh suggested. If you guys come up with any other ideas, please let me know!

I got the flowers for my son's wedding in bulk thru the local flower warehouse and it saved me a ton. You can order by the dozen and arrange in cheap vases and just lay on the tables. You don't need to be a professional.

Of course since it is fall, you can go outside and get lots of leaves and branches, even hollies for FREE!

Punch recipe:

Mix fruit juice and Sprite: 2 parts juice, 1 part Sprite. Can use whatever juice "color" that matches her colors.

Make a ring by pressing Sherbert into a Bundt Cake Pan and freeze overnight. Mix juice and Sprite before guests arrive and add ring. Sherbert turns into foam as it melts, very pretty.

If you don't want foam you can make an ice ring with water and fruit (or edible flowers) in the same Bundt pan.

Congratulations to your daughter.

My CA minister's daughter got married, and of course the entire church came to the reception with all the friends and family on both sides of the aisle.  We fed 600! people little handheld treats including cream puffs made with the addition of parmesan cheese (about the size of a large marshmallow) that we filled with chicken salad, and sweet cream puffs with a cheese & strawberry filling dusted with powdered sugar.  The cream puffs are incredibly easy to make, and they look like you spent hours.  You can bake the creme puffs the day before, then fill them right before the reception (or even during the reception if you have designated someone to watch the buffet table and replenish the food.)

My son was 12 at the time and he spent hours making the punch.  Also easy to do ahead of time.  We used frozen pineapple juice (it didn't freeze solid, just mushy) and we added gingerale and kool-aid (the kind made with sugar) for added volume and color.  We froze the pineapple juice in the 46 oz cans we bought it in (after taking out a cup or so to take care of the expansion as it froze.)  We dumped the frozen juice in the punch bowl, added the gingerale and cool aid, then used a potato masher to break up the slushy juice and mixed it all together.  It's like a slurpy!

If you can borrow some white table clothes from someone, I'd use them over whatever tables you can come up with – every card table in the neighborhood if you have to!

For the service table/s, I'd get a little bit (or however much the budget will allow for) of bridal toule to fancy up the table and the area of the wedding cake.  Of course, white table clothes or lace ones, can be bunched up around the serving pieces, but you have to be careful with that as well or it can overwhelm the table!

Even a couple of yards of the toule can fancy up the front edge of the table with a few flowers pinned to it.  Very dramatic with almost no fuss.  But your flower supplier probably has all sorts of ideas for you in that regard.

Gosh, we have a bunch of crocheted white place mats you could use, if only you were within arms reach!

In a pinch twin size sheets make good tablecloths.  They are often on sale as a 'loss leader' and you have the advantage of having some new sheets to use after the wedding!

Sorry I haven't replied to your posts. I've been incredibly busy with a gross anatomy exam the last couple of days. Once this semester is over if I never see another cadaver again as long as I live I'll be so happy I'll turn cartwheels down the middle of University Avenue in front of Volker Hall!

I'm going to show all of your ideas to my daughter on Friday and she's going to make her final decisions. Hopefully everything will come together without a hitch. I'll let you know what she decides.
