BTW, Ball/Jardin makes some nice white plastic "storage lids" that have matching threads to fit on canning jars. Very handy for storing canned stuff in the frig after opening. I have found that moistire in the frig can cause corrosion of rings over time.

OH WAIT I just went to their website and cannot find them! Hmmmm time for some research. I sure hope they aren't discontinued :(

They are still being stocked around here – even saw them in WalMart the other day.  I use them mostly for stuff like dried peppers stored in jars.  Of course, mayo jars are even better for that!

Here's the recipe I used except I didn't use food coloring and used rapadura instead of sugar:

Yeah I hated when mayo jars went all plastic but I now use the heck out of em for dehydrated stuff.

Glad to hear those lids are still out on the shelves. I like them, but if they go poof I have plenty of other lids from Oliverio products and such.

It's the Brazilian/Portuguese form of raw cane syrup/sugar.

I was hoping to get around to hot pepper butter but it didn't happen because I canned 22 pints of "rotel". Came up with a really tasty recipe!

The next door neighbor stopped over and gave us a bunch of tomatoes.  Ours have not produced a whole lot this year, so I am ever so gratefull.  I will be making salsa–we have a bumper crop of peppers this year.

I don't think I am canning any whole tomatoes this year, they are so watery anyway.  I almost always have peppers in just about everything tomatoes are added to–chili, spaghetti, pepper steak.  I think I will have enough for 4 or 5 pints.  I have big hopes for next years garden!  HungryHungry

My budget plan is NOT getting a cart when I go to the store.

I don't know what I'm canning today–probably nothing, just prepping to can something tomorrow.  Last night I sliced up a box of eggplant and got it blanched and frozen.  Saved some out to make fry some in batter–so YUMMY.  I'll see what we get from the farmers market this evening.

Not sure I will get to anything today either.  Want to.  There is plenty to do – and in anticipation of doing more, all the canning stuff is still sitting out, ready to go.  Oh, it is so unfair to have to go someplace on days I'd rather be canning!

Tonight's haul from the sorting from the farmers market–3 buckets of tomatoes and a bunch of sweet peppers and eggplant and a box of apples.  We also actually BOUGHT (gasp) a box of hot peppers.

I will be busy this week!

I'm about to be done done done with tomatoes, stick a fork in me.

Nothing for me for a few days :(

I'll be at the state 4-H camp for a conference until Friday and then an all day meeting Saturday and another Saturday evening arghhhh. I should have wireless at camp though so can live vicariously Laugh

HOWever – last year at the camp there was a cherry tree totally loaded and untouched that was pointed out to me JUST as we got in the cars to leave. I spent 20 minutes looking for someone to ask permission from to pick to no avail. Taking buckets this time, anticipating :)

Oh wow, that's exciting about the cherries!!!!!!  Are you a 4-H leader?

I'm thinking about what to do with these tomatoes today.  Not sure I want to do more plain canned.  I'm about full up on that and kinda tired of it.  There are a couple recipes in the Ball book I'm thinking about trying–honeyed-yellow tomato butter and tomato-apple chutney.  That sounds like more fun….

Don't forget, Suzanne, that tomatoes freeze well, especially for use in cooked things – like jams, chutneys, butters…  Smile

No, but I was a 4-H'er until I graduated from HS and spent a lot of nights at Jackson's Mill, so this is fun for me. I mentor a group of clients and staff at work and we fund raise all year to pay for this annual conference (it used to be at Canaan Valley). It's a self advocacy group for adults with developmental disabilities called People! First. We took a couple of hundred dollars and turned it into around $2,000 this year :)

Sounds like you still have yellow tomatoes! I just bought a fundraiser cookbook from the WV All Airborne Chapter and there is a NICE looking recipe for Yellow Tomato Preserves if ya want it….

has crushed pineapple and some thin sliced lemons. Says it's from the 1800's.

Working today, but I cooked grapes and have 3 gals of juice for jelly making Sat.  I did freeze 2 gallons for later, and I still have apple juice from last year.  I love to make jelly!!

Don't cry because it's over—smile because it happened!

I'm really wanting to make grape jelly when things calm down around here.  My kids LOVE grape jelly.
