I've been doing tomatoes all day!! Juice, sauce, plain canned. I feel like Pete right at the moment!!!! But I will love it the first jar we open and enjoy!!

I'm done for the day – of course none of the tomato projects is done! But there are two gallons of pureed pulp waiting to be made into something tomorrow, in addition to enough tomatoes prepared for 4 batches of tomato preserves, apples sauced and ready for several batches of apple jam AND spiced applesauce, and more tomatoes in freezer bags measured and ready for a couple of batches of chutney. And still more apples to attend to! At least they are not as acidic as tomatoes, so won't stain and burn the hands as badly. For those who can stand it, gloves really are a good idea when handling fruit, but alas, some of us just prefer the bare handed method, resulting stains and all.
How come yellow tomatoes seem to stain more than the red ones?

I'm back to the tomatoes…………things are heating up that I'd put in the fridge last night. The kitchen is cleaned up and ready for day #2! The tomatoes just started getting ripe here last week, then we had the freeze the night before last. Blight got to my tomatoes (in the main garden area, I have some cherry tomatoes on the south side of the house that didn't get hit) about 2 weeks ago (I didn't know what blight was, had to do some major research on it!), so I had to purchase from the roadside, so I just bought all I would need in one shot!

Will grudgingly admit to being absolutely overwhelmed by the produce in this house! It took a while to get going this morning, between that and the hands being so sore that they didn't work right. All better now.
Pots of water are simmering. Gave up and threw the tomato puree into the BIG crockpot with some veggies and herbs and let it do it's thing without my assistance and will pc that tomorrow, or late tonight. Sort of used the BBB recipe for "Italian Tomto Sauce" adding our home grown garlic to the pot.
May have enough tomatoes to mix up some Sloppy Joe base as well, but it will be a while before I know that for sure.
It Caramel Apple Jam time! And will use the apple cooking juice to make some apple "jelly" as an experiment. Gotta run… :snoopy:

Oh, that Caramel Apple Jam recipe is terrific! I used a bit more than the 6 cups of pulp, just because that was what was in the measuring cup, and it worked out fine and got me an extra half pint, with barely enough for a taste of the finished product. (One of those scraping the pan, ladle, and stirring spoon kind of deals to fill that last half pint!)
Y-U-M-M-Y!!!! That is some VERY good stuff! Especially if you like apple butter, without quite so much cinammon and sugar.
Will definitely be doing more of this stuff. At the rate I expect to be consuming it, there may not be much left for gifting!
Now on to the experiment with making jelly from the "juice" left from boiling the apples. It will be cloudy, but we shall see. Hmmm. Maybe I should use it for jalapeno jelly? Well, now. Maybe I will think about this some more…

I'm glad I don't have apples to do, too!! That's next week! I'm about tired of tomatoes for day #2.
Anyone have an easy way to dice tomatoes? Any handy little kitchen gadget I haven't thought of? I started to dice up the tomatoes for Rotels, but got tired of that real quick and just smushed them, now I'm doing stewed tomatoes.

Hang in there with the tomatoes LOL – in a month or so we will all wish we had a nice fresh tomato 
I always feel that way about the last boxes of tomatoes – it's bottomless…..
And no, I know of no easier way to dice up the ripe tomatoes except by hand ;)
The rotel was a time consuming job but now I am glad I did it for sure.

I love leg of lamb for dinner. I make apple jelly and add spearmint extract, and tint it green because you just expect mint jelly to be green. I't just a crime to pay for a little jar of mint jelly when I can make it myself.

Yellow Tomato Chutney (p. 51 of the BBB 100th Anniv edition) is cooking. Misread the yield, and had 8 half pints ready to go – but the pan is overflowing with chutney, and glancing back – it makes 7 pints! So, we shall use those last 8 half pints and put the rest into pint jars. Then go buy some MORE half pint jars!
Awww. So much good stuff, and here I thought we had more half pint jars than ANYONE could possiby use! Wrong, again…

Salsa today………yield about 32 pints. I actually hand diced all those tomatoes!! I did that first so I wasn't tired of tomatoes before the end of the day! 
Then more juice…….this is absolutely the best tomato juice we've ever had (never had homemade before), and 2 jars are gone already, so making more of that. And juice can be used for anything besides just drinking, so I'm safe making that! And with the electric ricer, it doesn't take much to prep! I love my gadgets!

THIS IS THE LAST DAY OF CANNING TOMATOES!!! The salsa took longer than I expected yesterday (I didn't really think through all those jars), so today is the last basket of tomatoes being made into juice. I think I need that steam juicer for next year before summer starts……..I'm putting it on my Christmas or birthday list (you know for those guys that just have to have a piece of paper handed to them! )

Yea! I "canned" last night!!! Actually I shelled and put in freezer bags 8 quarts of zipper cream peas. Sorry guys, thats as close as I get to canning.

I am done with the canning from the garden but have become very interested in this topic and plan to purchase a pressure canner and experiment with all kinds of things. I am so very glad that this topic is here. Dede, I especially want to thank you for your posts. I never NEVER would have been brave enough to even think of canning meats if it weren't for you.
Do you know that you are a wonderful and talented bunch of ladies?! And, yes, 52, you are wonderful and talented too!

I've canned for years (and years and years…) both with a water bath and a pressure canner. I now have two of each. But I never considered that I could can meats or stews or soups. I've got a huge pot of beef stew ready for the pressure canner. Usually I'm just thinking of what to do with the leftovers when I make a batch of stew for 14 (and there are only two of us) but this time I'm deliberately making a batch to can for the winter. It's like I've found a new toy!

I'm canning NOTHING today! I don't care if the rest of the apples rot, I WILL CAN NOTHING TODAY, PERIOD, AMEN!
Then again, I NEED some apples prepped for more Caramel Apple Jam, my new favorite thing in the entire world, especially as an ice cream topping. (That's saying something from one who hasn't traditionally been much for ice cream and doesn't much care for apples, especially cooked ones, anyway.)
Birdie got me to thinking about canning meats way back there (as in "way back there" being about a year ago?), then Dede came in and finished off what Birdie (Where has she been lately? Busy canning all that produce from her acres of garden, maybe!) had set us up for! They did us in, they did! A canning double play?

I've been wondering where Birdie is, too! After she got us talking about canning wonderful things…. Yes, you're probly right, all those acres have to be preserved!! I could NOT even imagine all that!!
I just love my pressure canner!! I took Suzanne's hint and pressure canned my tomatoes instead of BWB……..time saver!!! I did 3 bushels and I'm sure I would have been in that kitchen a whole lot longer! I did many pints (as that's the size we normally use), so I could do a load of 20 pints in 55 minutes from the time I turned the burner on until I opened the lid back up. I could have only done 10 at a time in the BWB.
I had 4 dozen ears of corn that John picked up when he got my tomatoes. They were the end, so we got a great deal on them. That gave my 28 pints. They're just having to go into the canner now.

Yeah write it in permanent ink LOL. Going to steam juice some blueberries in a few minutes for the first time ever – curious to see what yield I get. Then I have to can the strawberry juice I SJ'd the other day and this juice BEFORE I go to bed tonight. Thinking jellies in a month or so on a cold day…..
The steam juicer can steam those tomatoes, removing much of the juice. The tomato 'stock' canned for soups (or some now are cooking pasta and rice in that) and the remaining pulp run througha food strainer and canned as tomato sauce with no cookin down needed :)

You are welcome and I am glad to hear this – for years the only meat I ever had canned was venison (YUM) or veggie soup with venison or beef, etc. and then joined canning groups on Yahoo and a whole new world unfolded! Now I don't want to ever be without my canned chicken breast, canned ham, all that good stuff. The pressure canner pays for itself very quickly :)
