No turkey at your house Pete? Horrors! LOL
We love the turkey day leftovers more than the main meal here. And I have to have stock – it's part of next year's meal!
No canning today – kitchen smells good though – mixture of a big pot of potato soup, green onions in the dehydrator, topped with the Ivory soap smell of a 6 gallon batch of laundry soap!

We do have a turkey and a couple of turkey breasts in the freezer, so there is still stock potential, just not this week. Or at least not on Thursday.

I'm doing up some more Caramel Apple Jam and some cranberries!! I didn't know mom bought CANS (uugghh) of cranberries, she uses it for all sorts of things I guess. So I'm making a batch for her today to keep on hand.

Everyone is going to think I've lost my marbles, but I actually like that jellied cranberry "sauce" in a can…not because it is any good, but because it brings back good memories of my Grammy's house at Thanksgiving. She always had that canned cranberry sauce and a wilted lettuce salad on the side. She also always kept some of that gross ribbon candy and those little raspberry jelly-filled hard raspberry candies on the table for Xmas. To me, raspberries still taste like Xmas.

I am new here and just finding my way around. Could you tell me where I would find the Carmel Apple Jam recipe? I went to the recipe forum but working my way through 49 pages of recipes seems daunting at the moment…actually, I am afraid I will get side-tracked by so many tantalizing recipes I would forget what I'm looking for. I would be very grateful for a page number. Thanks, Sandra

Thank you Cindy. Yesterday I canned the Basic Italian Tomato Sauce, today I baked the loaf of Pumpernickle bread. Wednesday, might be the caramel apple jam!

I did several cans of Suzanne's cranberry sauce. I got great raves especially from my sister-in-law. I really need a new copy of the Ball book – mine is splattered.

Oh Susan sounds great! I usually roast my carcass first, then cover with water and put back in the oven…. yesterday I looked at that thing after taking the last of the meat off. It was in the big electric roaster. I just covered it in water, added celery and carrots and onion skin and covered it and let er go all night LOLOL.
So, turkey stock canning here too today or tomorrow.

Got 10 half pints from Suzanne's cranberry sauce recipe. Added the zest from one orange as well. It is very tasty!
Been making cranberry sauce for years, and kinda like it really, really thick. So, I may go back to the original recipe, with the addition of at least the zest of if not the entire orange. But, will wait to see just how thick this becomes. The proportions of water to fruit is wetter than what I usually do.
Tasty, yum!

I just canned several pints of Cranberry Conserve (from an old Ball Blue Book). Before I met Suzanne (well not personally) I feared canning. You know the stories you hear??? Like when someone asks how old Aunt Minnie lost her eye and the old ladies say in hushed tones, "It was a canning accident." I always felt like I needed a hard hat and eye protectors. Suzanne makes the scary and complex not so scary or complex. I appreciate that she shares her mistakes with us…because she does share her mistakes and how she turns them around I felt confident enough to work out a problem I had when I added too much water at the beginning of the project. My jars are pinging and look so pretty! Thanks to all of you who help us babies get started!

Congratulations, Sandra!!!! Yes, I know your feeling!!!! Suzanne gave me the bug last fall……..then a few of us REALLY caught the bug in the winter when we realized SO MANY things that can be canned!! Thanks, Dede! Our lives have changed for the better!

I want to make some ambrosia conserve next (for Christmas gifts). I need the slivered almonds and fresh pineapple. I've got everything else, I think. (Coconut, oranges, marschino cherries.)

We got the pig in the freezer yesterday………but it was about 100# more than last year, so I had to do some fast freezer cleaning to make some room…..
Today I canned 7 quarts & 9 pints of chicken/vegetable soup. I didn't put noodles or anything like that in, in case I want to thicken and make a chicken/veg gravy or something.
Also working on cutting 20 more pounds of chicken up to can into 1/2 pint jars for some easy sandwiches or something like that.
AND venison ribs are cooking down for venison broth…………….my brother has been saving them for me and at Thanksgiving brought me 2 bags full!!!! This will work great to replace anywhere I want beef broth, I like venison sooo much better!

I haven't canned anything in several months, but I'll drag the PC out after Christmas and can my stock instead of freezing. And I froze my cranberries (after I bought 10 bags), but I'm going to try the cranberry stuff Suzanne made. I do love fresh relish, and now I can have the same great taste year round.

I'm not sure if I'm doing this right, but I wanted to echo Farmgirl wannabe's comments. I bought a pressure canner for my birthday in February and was afraid to use it. I did the water bath canning this summer, but last week I was forced to use it when my husband killed an 8pt deer and wanted canned deer meat. I'm pretty sure I was successful. I didn't blow a hole in the ceiling anyway and the meat LOOKS cooked. We haven't tried it yet as I kept some fresh and we're eating it first.
My newest dilemma is the fact that my freezer went out yesterday. I'm going to have to can the green beans that I froze. I also have a gallon bag of blueberries. Any suggestions on what I could do with the blueberries?

Maybe the easiest and quickest way to deal with the blueberries is to make jam of them. I think there is a recipe in the pectin box for it. Will grab one in a bit and double check that. Meanwhile, if you have one, grab it to see.
Would suggest that you get the blueberries measured as quickly as possible to get as good a measurement of them before they thaw completely and begin giving off their juices. Even if they have thawed completely, whatever you end up with will taste great – you may just have to change what it is call!
If you have a Ball Blue Book, or other canning book, there should be recipes for conserves and other canned goodies using the blueberries. If that doesn't work for you, there are quite a few resources listed over in the "Canning Pot" section of the forum to check for ideas on line.
I don't remember off hand that Suzanne has posted anything specific about blueberries. Anyone with a better memory than mine can correct that!
