Make a blueberry dumpcake for Christmas dessert!!  Usining Suzanne's Yellow Cake Mix recipe of course!!!!  Blueberry pie filling would be just awesome………..actually you can make up some Christmas gifts with all of this that you thought was going to be a dilemma.

But, like Pete said, get some measurements before they're thawed if you can!

I've got 20# of chicken that I skinned and deboned (not the easiest of ways to do this, btw) and canning into 1/2pint jars.  I raw packed them.

The next 20# I am going to cook it first then pack with chicken broth.

And yes, I'm making chicken broth with the bones I had left over from deboning earlier!

All of this when I should be working on Christmas gifts, just because my pig was bigger than I expected!

What I would do with the blueberries, is cook them (just enough water to barley cover), strain the juice and use for jelly.  If you replace the freezer, you can freeze the juice until later, or make the jelly now.  A gallon of berries will make a good bit of jelly, or you use the cooked berries to make jam.  I always freeze blueberries and make jelly later.

Tink….tink….tink….tink……ahhhhh, what a glorious sound!  I have canned enough to fill one more shelf in the pantry.   All on $7.50 worth of meat.  What a glorious, glorious feeling I have today! Sun

There's also a recipe for a blueberry sour cream coffee cake in just recipes, since you already have to can all those beans.

I'm making a pot of beans today, so I soaked double the amount and taking a stab at canning chili beans today using the recipe for chili gravy to fill in for the water.

I'll let you all know how it comes out!!

I am thinking about doing beans too – have a nice hambone to use. Thinking that I may do a big batch and can some. Maybe bean soup instead of soup beans. Oops it's almost noon – better get em and do a boil and soak ASAP lol!

Getting ready to throw some things into the crockpot and/or stewpots.  We shall see how that developes.  Getting hungry to cook that ham in the refrigerator as well!  It's big enough to try canning some of it, too.

That last ham bone beans/bean soup turned out quite well, but now I'm not sure I remember how to do it!  Yes, I usually do better than that, but think the basic recipe came from the BBB.  Maybe I made some notes in the margin…

The chili beans look great!  We're having some chili tomorrow so I can report back with the taste!

Congrats on the chili beans, Cindy!

Got some cube steak partially cooked in the crockpot with plenty of onions and some mushroom soup.  Will warm up the crock tomorrow and try canning it.  There was a lot more fat than I was expecting, so decided to make this into a two day project instead of canning it tonight.  Will remove most of the fat tomorrow before warming it and running it through the pressure canner.

Think these should go into wide mouthed pint jars.  There are 30-some odd cube steaks in the crockpot!

Yum, Pete – sounds like a good project. I would defat those also but I am also surprised that you are seeing a good bit of fat.

Hey – are you getting these howling winds down there?

Sounds like a freight train coming up the hollow.  Off and on.  Sort of like a few weeks ago when we lost electricity because of the wind…

Yeah, my thoughts also ……and the temps fell 8 degrees in the past 20 minutes too.

Time to go to bed and worry about it in the morning when I can see what's evolved …..

I'm sure there is a receipe for Red Pepper Jelly or Jalapeno Jelly, but the search engine dosn't go straight to the post, just shows the thread.  Anyway, just got back from my uncles and his wife has a great tree full of peppers in the yard and was talking about how she loves pepper jelly.  Anyone have a receipe? CityGirl, go to the Community Cookbook — to the right in the sidebar.  That's the easiest way to find recipes!!!  Then it's broken down into categories.  Jams, Jellies & Preserves I think it's called.  There's one in there……Hot Pepper Butter, look that one over, it was a big hit here and several other homes!!!

The Hot Pepper Butter is excellent!  But it's not pepper jelly….  I too am looking for a really good pepper jelly recipe, it's fantastic on top of crackers and goat cheese or cream cheese and other cheeses too as a savory/sweet type cracker… it's also good to brush on chicken while roasting whole or baking pieces or to put on burgers too believe it or not!  Probably lots of other things but those are the first to come to mind.

ANYWAY, the two are different though both wonderful.  I'll be watching for pepper jellies recipes too!!!  One thing I also had a long time ago was a peach conserve with pepper jelly in the background because she didn't have many peaches really, and hot pepper flakes in it too.  THAT was really good!  …Hmmmm, I'll have to start some concocting I think!!!  She didn't have an actual recipe, just played it by ear she said and I'd forgotten about it till now!

If tomatoes are a fruit, then isn’t ketchup technically a

Just turned the fire out on 9 pints of cube steak and 1 pint of the excess "gravy," which is really more like a chunky broth!  Now I'm glad that I only added one pint of the mushroom soup to the pot.  That was enough.  Had added 4 pretty large onions as well.  It looked pretty much like dog food going into the jars, but the taste should be considerably better.

Thought there was at least one recipe for pepper jelly already posted.  Will check to see, then post the most recent one I used.

If all else fails, the Certo bottle has a recipe on it…

Sure enough, there are at least 4 types of pepper jelly listed in the index of jams et al.  http://suzannemcminn.com/chick…..s-butters/

Just pick the one that sounds appealing.
